As a busy work-from-home mom with a toddler and a tween who I homeschool, my days are interesting to say the least. There is never a dull moment around here and some days it’s pretty hard to make sure I stick to a healthy eating plan, let alone eat lunch at a normal time. Between homeschooling, chasing a toddler and deadlines for my job, taking the time out to make myself a salad or a healthy lunch that I enjoy sometimes gets put on the back burner. When that happens, I usually end up eating some mac and cheese or whatever I’m feeding the kids. Or worse, take out. Last week alone, we ate out three times. Not only is that a huge waste of money, but it’s not the healthiest option for me. When I’m trying to stick to a healthy diet, I do better when I portion my snacks and plan out my meals. When I have healthy snacks handy, I’m less likely to reach for the junk food (which I already buy minimal of). The same theory applies to my kids….
