I love any reason to throw a party. So when I was offered the opportunity to gather some of our closest friends and family together to throw a party around one of my favorite fruits – avocados, – I couldn’t say no. Since summer was winding down and the kids had a few half-days, I thought it was the perfect chance for one last party to give Summer a proper send off, avocado style.
Since everyone in my family loves avocados, hosting a party to celebrate them was easy! They are a great addition to any party menu and you can use them in so many delicious recipes. I love cooking with avocados and try to incorporate them into our meals almost every day.
The avocado’s smooth, creamy consistency and mild taste makes it one of the first fresh fruits a child can enjoy. They were actually one of the first foods we gave to Evie and she hasn’t looked back. She loves them in recipes, by themselves and in smoothies. She can’t get enough. Especially in her favorite avocado smoothie recipe.
Avocados contribute nearly 20 nutrients, including vitamins, minerals, dietary fiber, and phytonutrients, that are important to infant/toddler nutrition. The avocado’s smooth, creamy consistency and mild taste makes it one of the first fresh fruits a child can enjoy.
I wanted to keep the foods simple and make more like finger foods snacks for the kids and the adults. Fresh Avocados – Love One Today® sent me so many yummy recipe ideas and everyone went home with their favorites ready to re-create them at home with their kids and families.
I picked the Chipotle Avocado Stuffed Cherry Tomatoes. These make such a great party food and everyone loved them! I’ll be making them at all our parties from now on.
- 14 larger cherry or cocktail tomatoes
- 1 ripe, fresh Hass avocado
- ½ cup low-fat greek yogurt
- 2 tbsp. cilantro, chopped
- 2 tsp. line juice
- ½ tsp. chipotle powder
- ⅛ tsp. salt
- 14 small cilantro leaves for garnish
- Slice tops off the tomatoes and scoop out seeds and pulp. Drain. cut side down on a paper towel
- In a blender, puree the avocado, Greek yogurt, cilantro, lime juice, chipotle chili powder and salt until smooth.
- Spoon or pipe filling into tomatoes
- Garnish with cilantro leaves
- Serve immediately.
I also made Agua Fresca de Aguacate. This was a refreshing and simple drink that contains no added sugar which is great for the kids. They all loved it! With just a few ingredients it’s easy to whip up any time not just at a party.
To make this, combine 4 cups of honeydew melon, 1 ripe avocado (halved, peeled, pitted, and sliced) 4 cups of water, 1/3 cup of fresh lime juice and 1/4 tsp. of salt in a blender and blend until smooth. Serve over ice. That’s it! A simple and delicious drink the kids will love.
Overall, our party was a hit and I’m so glad I had a change to celebrate with everyone before the craziness of the school year officially kicks in.
