It’s officially February. While I’m not sure where January went, right now I’m all about living in the moment and looking ahead. Over the last few months, my husband and I have made changes to our lifestyle to live a more healthy life. We’ve started eating healthier, cut back on the amount of fast food we eat and started meal planning and meal prep at home. Keeping our fridge full of fresh produce for salads and dinners and a pantry full of healthier options for us to make dinner. I’ve been incorporating more vegetables into our meals – even our favorite smoothies. In celebration of American Heart Month, I’m sharing one of my favorite dishes, Avocado Salsa Chicken.
I’ve become slightly addicted to this avocado salsa eating it with tortilla chips for lunch and even by the spoonful at times.
So has my husband. Diagnosed with high blood pressure last year and having a family history of heart disease, we’ve been on a mission to not only eat healthier but live a heart healthy lifestyle. He’s joined a gym and I am shortly as well. We’ve cut out excess salt and lots of the processed foods that he used to eat and replaced it with salads and healthier dinners like this one. In this short time, we’ve already seen improvements which is such a great motivator to continue on this healthy lifestyle quest.
This recipe is easy to make on busy nights and it’s something the whole family will enjoy. Even my picky eater loved it. The avocado salsa is great by itself but it’s even more amazing over this chicken with a cilantro lime marinade.
For the marinade, mix cilantro and garlic to a little olive oil and brush it on the chicken. Sauté in a pan with a little more olive oil.
To make the salsa, I used plenty of fresh ingredients like cilantro, garlic, limes, an onion and avocados with a can of Hunt’s Diced Tomatoes with no added salt.
I lightly chopped the onion and avocado and added them to the blender with the Hunt’s Diced Tomatoes, the juice of one lime and plenty of fresh garlic.
I pulsed everything only two or three times just to give everything a good chop and to thoroughly combine it all.
Once the chicken was cooked, I spooned the salsa right on top of the chicken. The end result was delicious and one of my family’s favorite meals right now.

- 1 lb chicken breast thinly sliced into at least four pieces
- 2 limes
- 1 can Hunt's Diced Tomatoes
- Fresh garlic
- 1 avocado
- ½ of jalapeno pepper
- ½ onion
- Olive Oil
- Fresh Cilantro
- Mix 1½ tbsp. of olive oil, 2 tbsp chopped cilantro, juice of half a lime and 3 cloves of garlic finely chopped.
- Brush onto chicken breast and cook until done.
- In a blender add in half of onion (chopped), can of Hunt's Diced Tomatoes, avocado (chopped), juice of one lime, half of the jalapeño pepper, remaining cilantro and 7-8 garlic cloves chopped.
- Pulse two or three times to combine and chop into small pieces
- Spoon salsa over chicken
- Serve immediately
- *Recipe will make 4-8 pieces of chicken depending on how many pieces are in your pack
