We do a lot of entertaining at our house this time of year. Between birthdays, the holidays and football season, it seems like we always have something going on. Whenever we have guests over whether it’s for a quick visit or an all day stay, I like have easy recipes I can whip up quickly to serve them. Over the summer we had an endless supply of tomatoes from our garden (I’m really missing them right now) and every cookout everyone was requesting my balsamic tomatoes with feta cheese. In fact, they were the inspiration behind these Balsamic Chicken Bites. Chicken, garlic, tomatoes, basil and delicious feta cheese with a balsamic drizzle are a delicious holiday appetizer or delicious way to impress your friends on your next girls night in.
Funny story, I just starting eating feta cheese. I’ve avoided it my entire life but now I love it. Well it’s actually been about a year now but I don’t know how I went all these years avoiding it. I’m not exactly sure what I thought it was but it wasn’t until my daughter’s christening that I tried it on a salad and loved it. Ever since, I try to incorporate it into dishes whenever I can.
I wanted to serve these on a crispy, thin cracker to up the presentation factor a bit. So I went with Rosemary & Sea Salt Wasa Thins. These thin crackers are baked for a light, delicious crunch with hints of rosemary and a sprinkle of sea salt. The thins pack 9 grams of whole grains and have just 70 calories per serving making these a delicious and better for you snack. They’re Non-GMO Project Verified and are delicious by themselves and even better with toppings.
These Balsamic Chicken Bites are so good I may or may not have had to re-make the recipe because I ate the batch I made before I had a chance to photograph them for this post.
I cannot wait to make them again this weekend. I think they’ll make the perfect game day snack.
I found these Rosemary & Sea Salt Wasa Thins in my Shoprite in the frozen food section but I’ve seen them on the cracker aisle in some other stores.
- 1 Pack of Rosemary and Sea Salt Wasa Thins
- 1 Pint Cherry Tomatoes
- 5-6 Large Basil Leaves
- 2 Cloves of Garlic (chopped)
- 1 tsp Olive Oil
- Feta Cheese
- Balsamic Vinegar
- Quarter cherry tomatoes and set aside
- Chop basil and set aside
- Add chopped garlic and olive oil to pan over medium heat. Cook garlic for 2-3 minutes
- Add Chicken and cook until done. Remove from pan and shred.
- In a small bowl mix chicken and balsamic vinegar 1 tsp. at a time and mix. I used 3 teaspoons but you could use more depending on how much flavor you want
- Lay Rosemary & Sea Salt Crackers on serving tray.
- Top with chicken
- Top with diced tomatoes, basil and feta cheese
- Serve immediately
