With Christmas only a few short days away, my days are filled with last minute errands, wrapping and plenty of list checking. We’re visiting family on Christmas Eve and hosting brunch at our house Christmas day. I love entertaining, especially at the holidays and want to make everything special for my guests while they’re here. I know the kids will be so excited with everything going on and I want to make sure I’m there to capture every minute of it. I finally decided on our menu for the day and I’m making these delicious breakfast pizzas paired with plenty of orange juice, because who doesn’t love orange juice at brunch.
If you know me, you know I love easy recipes that are not only delicious but simple to make. Since I’m also hosting Christmas dinner, I want the brunch to be something savory and delicious but at the same time not to heavy since we’ll be having an early dinner that afternoon.
These breakfast pizzas can be sliced into smaller pieces for snacking and paired with some fresh pineapple and juice. It’s the perfect snack to nosh on while the kids open and play with their gifts and the food cooks for dinner later that afternoon.
Sitting around on Christmas morning surrounded by giggles and family is one of the things I love most about the holidays. The memories created and laughs shared are some of my most treasured memories and I cannot wait to make more this year.
To make your breakfast pizzas, you’ll need a nice flatbread. Depending on how large your crowd is, you’ll need a few of these.
I added eggs, bacon, shredded potatoes and two kinds of cheese for our pizzas but you could customize these with load of other toppings or even make a few varieties. I wanted to keep things on the simple side so I could spend less time in the kitchen and more time with my family so I stuck with one variety.
Now that I had the main dish taken care of, all that was left was to pair it with the perfect drink. When I think of breakfast or brunch, I immediately think of orange juice. I love a glass of orange juice with breakfast so it was only fitting that this was my drink of choice.
I picked up plenty of Simply Orange juice in the 59 fl. oz carafe (which is perfect for serving) and a bunch of the single-serve sizes for the kids. - Flatbread crust
- Bacon 5-6 pieces
- 6 eggs
- ½ cup shredded cheddar cheese
- ¼ cup parmesan cheese
- Shredded Potatoes
- Preheat over to 350 degrees
- Fry Bacon and set aside one cooked
- Cook hash browns until golden brown
- Layer cheddar cheese, hash browns on flatbread crust
- Crack 2-3 eggs per flatbread crust
- Sprinkle with bacon and parmesan cheese
- Bake 20-25 minutes until eggs are cooked and crust is browned
