Mashed potatoes are one of my favorite side dishes. I’m shocked when I hear from friends that they only eat them once or twice a year, usually holidays. To me, they’re great anytime of year and definitely not just on holidays. You can make them so many delicious ways with all different toppings. The possibilities are endless and they’re one thing I love to make. I especially love them with cheese. This cheddar mashed potatoes recipe is so easy to make and great for busy weeknights.
If I’m going to be honest, it really doesn’t get better than cheese and mashed potatoes. Two of my favorite comfort foods combined into one. Then add in the fact that these are so easy to make (ready in under 5 minutes) then it’s easy to see why I love this recipe.
The star of the recipes is Idahoan Signature Russet Mashed Potatoes. They have the perfect smooth taste, just like homemade mashed potatoes with a hint of butter and cream. You can easily make them with milk and butter or just water.
When it comes to mealtime, Sunday dinner is the gold standard as it’s the one day of the week when you’re most likely to go “all out” and prepare a great-tasting meal. - 1 packet of Idahoan Signature Russets Mashed Potatoes
- ½ cup shredded cheddar cheese + 2 tbsp.
- ⅓ milk
- 2 tbsp. butter
- 1⅔ cups of water
- Bring water and butter to a boil
- Remove from hear, stir in ⅓ cup cold milk and cheddar cheese
- Then add in potatoes. Let stand one minute.
- Mix with fork or wire whip and serve
- Top with remaining cheddar cheese and parsley for decoration
