I’m always looking for ways to put a fun twist on breakfast. Both of my kids love to eat and while their tastes vary from day to day, they’re always up for their favorites like pancakes or cereal. Honestly, who isn’t? Pancakes and cereal top my list of breakfast favorites too but they’re even better together like these Crunchy Oatmeal Cranberry Pancakes.
They’re a delicious twist on regular pancakes and they’re guaranteed to get the family to the breakfast table in no time flat. Homemade Oatmeal pancakes are one of my favorite pancake recipes but after making them a lot over the years, I was ready for a twist.
One of the great things about pancakes is how versatile they are. You can really get creative with flavors and additions for a yummy twist. Cranberry has always reminded me of Fall and we do a lot of baking with cranberries so naturally dried cranberries were the perfect fit for this recipe.

Crunchy Oatmeal Cranberry Pancake
These hearty pancakes are exactly what I was looking for. They have a delicious crunch to them thanks to the addition of Grape Nuts Original cereal. The Grape Nuts Original cereal is packed full of dietary fiber which help keeps us fuller, longer.
They are the perfect breakfast on these chilly Fall mornings. I whipped up a batch of these over the weekend for the family and they loved them. Even my picky eater went back for seconds.
First, I prepared all my ingredients so I was ready to go. In my food processor, I chopped up one cup of rolled oats.
In a large bowl, I mixed my dry ingredients first. Just flour, baking soda, baking powder, brown sugar, rolled oats and one cup of Grape Nuts Original Cereal.
Once that was combined, I mixed in the wet ingredients – milk and an egg.
Then they were ready to cook.
In a pre-heated pan, I added I scoop of the mix for each pancake. To keep them uniform in size and shape for easy cooking, I use a cookie scoop for scooping the batter up.
Cook 3-4 minutes on each side or until they are a nice golden brown color.
Serve immediately topped with more cranberries and some delicious maple syrup.

- Ingredients
- 1½ cups of flour
- ½ cup rolled oats
- 2 tsp. baking powder
- 2 tsp. brown sugar
- ½ tsp. baking soda
- ¾ Grape-Nuts Original cereal
- ¼ cup dried cranberries + more for garnish
- 1½ cups of milk
- 1 egg
- Butter for pan
- Instructions
- Pre-heat skillet on low - medium heat and melt butter in pan
- In food processor, chop rolled oats until they are a fine powder (3-5 pulses)
- In a large bowl mix flour, baking soda, baking powder, brown sugar, rolled oats, dried cranberries, and Grape Nuts cereal. Gently combine
- Add in 1 cup of milk and egg. Stir.
- Scoop 1 tablespoon of batter into pan (or more depending how large you want your pancakes)
- Cook 3-5 minutes then flip. Cook until golden brown.
- Repeat with remaining batter.
- Top with more dried cranberries and syrup. Serve Immediately.
I am so making these! They look awesome. Also, Grape Nuts have always been a favorite of mine and I haven’t had them in so long. Now I need to add them to my shopping list.
