This easy and delicious grilled chicken sandwich is the perfect recipe for busy days!
Watching what I eat has become a top priority lately. With summer almost here, I’m a little disappointed that my favorite pair of shorts have become a little too snug on me. I’m totally at fault because over the last few months take out has become my BFF. It’s just so much easier on busy days to hit the drive-thru than to cook and now it’s showing. So I re-evaluated my schedule to make sure I’m home and can cook meals and on days I anticipate will be busy, I prepare an easy dinner ahead of time. Lunch is usually what does me in. I’m busy making the kids lunch, answering emails and trying to make sure they get fed but forget about me. Instead, I’ll grab some chips, cookies or whatever else is in the pantry to hold me until dinner. Not anymore, this easy grilled chicken sandwich recipe is so easy to make and it’s become my go-to lunch lately.
It’s so good, even my kids have started requesting this for lunch. Packed full of veggies, chicken and topped with a little cheese, these grilled chicken sandwiches keep me full and let me focus on other more important things during our day .
Instead of using regular bread, I used Arnold® Sandwich Thins® (endorsed by Weight Watchers®) since they offer fewer calories and lower SmartPoints® value per serving than regular bread and are an excellent source of fiber. Not to mention they’re delicious.
To make the sandwich, I cut my chicken breast into thin slices. Then placed them in a bag with some olive oil, italian seasoning and garlic powder.
I grilled them on my indoor grill (which I love for cooking quick meals) and in about 6 minutes lunch was ready.
I’m not big on veggies (I know, I know) but I do love fresh spinach and can eat it all day long. So instead of lettuce, I layered plenty of fresh baby spinach leaves on the Arnold® Sandwich Thins® place a piece of chicken on top with some diced tomatoes and Weight Watchers® Mexican Style Blend cheese sprinkled on top. The cheese, made with low-fat milk, has a great taste you have to try yourself!
It’s such a delicious and filling lunch option for busy days. I usually make enough for a couple of days and I’ll just heat them up the next day for lunch.
