Growing up I wasn’t so much a picky eater, I just wasn’t an adventurous one. I knew the things I liked and rarely tried anything new. That mentality towards stuck with me throughout my life and I’m only now experimenting with foods and trying new things. When I was in my early twenties I was invited to a family wedding and I remember having to pick my dish – chicken or salmon. I knew I liked the chicken but since never tried salmon before, I asked my mom who was with me, what should I pick. Her exact words were “salmon is an acquired taste”. Hmmmm. Well, that was enough to scare me away. Anytime salmon came up on a menu, I skipped it. I wasn’t ready to “acquire” that taste. Fast forward to six months ago, when I was at a restaurant tasting event and they passed around the salmon. I couldn’t be rude. I had to try it. One little bite and I’ll wash it down with my drink. Only, it was delicious. One of the most delicious meals I’ve ever eaten. Now I make it at home all the time. Our favorite way is this Pesto Salmon with Roasted Potatoes and Asparagus.
Even my toddler loves it. It’s quickly become a family favorite dinner both for the ease of cooking and how yummy it is.It’s a delicious dinner that is perfect for any night of the week. It’s a dish that doesn’t take too long to prepare and it’s a one pan dinner so you’re not left with a sink full of dishes to clean. Oh and don’t worry about cleaning up the pan either. Now let’s talk more about this delicious recipe. One of the things I’m learning about salmon is just how versatile a fish it is. There are so many delicious ways to prepare it. Since I’m all about flavor, this is hands down one of my favorite recipes since it’s packed full of flavor from the garlic and fresh basil.
Plus this mamma loves easy one pan dinners. Drizzle some olive oil on a baking pan and on one side place your asparagus and the other your halved baby potatoes. In the center place your salmon pieces and spoon the homemade pesto on top of the salmon. Place a sliced lemon on top each piece of salmon. Sprinkle freshly grated parmesan cheese on top of potatoes, salmon, and asparagus and transfer to the oven.
Bake at 400 degrees for 30 minutes.
Once salmon is cooked through, remove pan from oven and serve immediately.
One taste and you’ll quickly see why this is my favorite salmon dish and it’ll quickly become yours too.

- 4 pieces of fresh salmon
- 1 bunch of asparagus stems removed
- 2 cups of baby potatoes halved
- Olive oil
- 1 lemon
- ¼ parmesan cheese
- For the Homemade Pesto
- 1 bunch of basil washed and stems removed
- 6 cloves of garlic
- olive oil
- ½ fresh grated parmesan cheese
- Drizzle olive oil on baking sheet
- Place potatoes on one side, salmon in middle and asparagus on other.
- Drizzle with more olive oil and sprinkle with parmesan cheese
- Spoon pesto on top of salmon and place one slice of lemon on top
- Bake in a 400 degree oven for 30 minutes or until salmon is cooked through
- To make the home pesto:
- In a food processor combine basil, garlic and 3 tbsp. olive oil and pulse until combined.
- Add in parmesan cheese and more olive oil (1 tbsp. at a time) until creamy
