Tish the season of pumpkin spice. I’ve actually been slowly picking up pumpkin spice everything for the last few weeks and now that it’s officially fall, I have no shame in indulging in my favorite season. Our pumpkin spice addiction has grown over the years but it all started with pumpkin spice coffee. One sip and we were hooked. To celebrate pumpkin everything season, I whipped up these simple pumpkin spice coffee ice cream bars for delicious treat.
With only two ingredients I’ve combined two of my favorite things pumpkin spice coffee and ice cream into one oh so yummy treat.
The star of this recipe beside the ice cream bar itself is the International Delight Pumpkin Spice Iced Coffee. It’s not only great in recipes but it’s perfect for those times your craving a delicious iced coffee. Iced coffee is a favorite of mine, especially when the weather is warm. I’d rather drink it over ice than hot.
The fridge friendly iced coffee is ready-to-drink and sold in half gallon containers. It’s the simple way to enjoy delicious coffeehouse taste without the coffeehouse hassle.
I found International Delight Iced Coffee in the refrigerated section at Walmart (near the teas/juices).
You can make you own ice cream bars in any of your favorite flavors.
- 2½ Cups International Delight Pumpkin Spice Iced Coffee
- 3 large scoops vanilla ice cream
- Blend International Delight Pumpkin Spice Iced Coffee and ice cream until smooth.
- Pour into popsicle mold and freeze 3-4 hours
- Once frozen, remove and drizzle with chocolate
