Chili Biscuits
Not only is this my favorite time of year but it’s also my busiest. Between work, wrapping presents, baking cookies and everything else that’s going on, my days are filled. We are heading over to my sister’s house for Christmas Eve and due to schedules, it’s more of an all day long open house party. I volunteered to cover the lunch portion and decided to make one of my favorite recipes but with a little twist. Instead of just bringing over a giant pot of my delicious chili, I told her I’d make these Spicy & Sweet Chili Biscuits instead. They’re easy to re-heat and even easier to make so I knew they’d be the perfect choice for her open house.

Each biscuit surrounds the delicious sweet and spicy chili perfectly. I’ve made them three times in the past ten days because everyone in my family wants more and no one wants to wait until Christmas Eve.

I can’t blame them. I was pretty sad when I heated up the last one for my son’s lunch last week. To hold me over for a few more days until I can enjoy each mouthwatering bite again, I’m sharing the recipe with you!

The secret to this mouthwatering recipe is adding a little brown sugar. That’s right I add brown sugar to the sauce to give it just a hint of sweetness. The chilies in the Ro*tel give it a nice kick while the brown sugar sweetens it perfectly.
Spicy & Sweet Chili Biscuits
Ingredients:
  • 1 Can Refridgerated Biscuit Dough
  • 1 pound of Ground Beef
  • 1 small onion
  • 2 cloves of garlic
  • 1 can of kidney beans
  • 1 can of Ro*Tel Diced Tomatoes with Green Chilies
  • 1 can of Hunts Tomato Sauce
  • 1 24 oz. can of Hunts Crushed Tomatoes
  • 3 tbsp. chili powder
  • 1 tsp. paprika
  • 1/2 tsp. garlic powder
  • 1/2 tsp. cumin
  • 2 tbsp. brown sugar

Step 1:  Brown ground beef, diced onion and two cloves of garlic until cooked.  Drain and return to pan.

Step 2:  Add in Ro*Tel, tomato sauce, crushed tomatoes and kidney beans. Stir.

Step 3: Add in spices and stir to incorporate.  Next add in the brown sugar and stir.

Step 4: Cover and let everything cook together for about 20 minutes.

Step 5: Preheat oven to 350º. Line a cupcake pan with the biscuits and press down in the center to form a cup.

Step 6: Add in one heaping spoonful of chili into the center of each biscuit.

Step 7: Bake for 10 – 15 minutes or until biscuits are done.

Step 8: Remove from oven and sprinkle with some cheddar cheese.

Once they are cool to the touch, remove from pan and place on serving tray and get ready to watch them disappear.

They’re that good. I picked up everything I needed for this recipe at Walmart from the Ro*tel right down to the onions and garlic. Gotta love one stop shopping during this busy time of year!

These look so YUM (and I have been looking for a simple homemade chili recipe, too!!) I may have to take out the beans... Texas and beans in Chili don't mix ((WINK))I hope your extended family loves them as much as your immediate family!
