Growing up I wasn’t so much a picky eater, I just wasn’t an adventurous one. I knew the things I liked and rarely tried anything new. That mentality towards stuck with me throughout my life and I’m only now experimenting with foods and trying new things. When I was in my early twenties I was invited to a family wedding and I remember having to pick my dish – chicken or salmon. I knew I liked the chicken but since never tried salmon before, I asked my mom who was with me, what should I pick. Her exact words were “salmon is an acquired taste”. Hmmmm. Well, that was enough to scare me away. Anytime salmon came up on a menu, I skipped it. I wasn’t ready to “acquire” that taste. Fast forward to six months ago, when I was at a restaurant tasting event and they passed around the salmon. I couldn’t be rude. I had to try it. One little bite and I’ll wash it down with my drink. Only, it was delicious. One of the most delicious meals I’ve ever eaten. Now I make it at home all the time. Our favorite way is this Pesto Salmon with Roasted Potatoes and Asparagus….
