HOW TO MAKE BACON SWEET POTATO BREAKFAST PIZZAS
Mini Breakfast Pizzas are a delicious way to start your day. Add some crispy bacon, sweet potatoes and a yummy egg for a dish the whole family will love.
- 6 eggs
- 4 slices of bacon
- 2 large sweet potatoes
- shredded parmesan cheese
- parsley (optional)
- 1 tbsp. olive oil
- Shred sweet potatoes
- Drizzle olive oil in pan and add sweet potatoes. Cook until tender and lightly browned
- Add bacon and cook until crisp
- Spray the inside and outside of canning lids with cooking spray and place in pan.
- Crack one egg inside each lid and cook until done. Gently remove lid before removing from pan. Repeast until all eggs are cooked.
- Toast an english muffin and sprinkle with parmesan cheese.
- Top english muffin with sweet potatoes, one egg, bacon and more parmesan cheese.
- Serve immediately
