The Bacon Sweet Potato Mini Pizza recipe is simple to make, which is important, because I’m all for simple recipes. Plus everything can be made right in one pan, if it’s large enough like my cast iron skillet. If you don’t have one of these, I highly recommend it. It holds so much and I rarely have to bring out two pans when I cook anymore.
The shredded sweet potatoes, bacon and eggs all fit perfectly and can cook together making clean up a breeze too. Yay for one pan meals.
For the round eggs, I cooked them in canning lids sprayed with cooking spray so they don’t stick. Simple trick for perfectly round eggs.
Once everything is cooked, I’ll layer it all on a delicious Bays® English Muffin and top it all off with some freshly grated parmesan cheese.
