Don’t let a busy morning get in your way of a delicious breakfast. These banana pancakes have only 4 ingredients and simple to whip up in no time flat!
With school starting back, I like to have easy recipes ready for busy mornings. One of my go-to breakfast recipes during the school year are these 4 ingredient banana pancakes. They’re simple to whip up and they taste delicious! These little babies aren’t just for breakfast either! You can totally make these banana pancakes as an after school snack or anytime of the day.
When it comes to food, there isn’t much that my little one won’t try or eat. Compared to my son at this age, she eats everything. From fruits and vegetables to our favorite Spanish food dishes, there are only a few things she won’t eat. I can only hope she stays this way and I do my best to help encourage her by introducing new foods to her all the time.
My oldest on the other hand was a completely different story. He was a very picky eater (and still is) by choice and as the result of a food allergy.
So I can understand moms who struggle getting their kids the right nutrition they need and to eat healthy throughout the day.
That’s one of the reasons I love this recipe. Made with bananas and served with some fresh fruit on the side, I know that this is a healthy treat they’ll love.
This was one of Ryan’s favorite snacks when he was a toddler and now Evie loves them too!
You know those bananas that are ripe and ready to eat but hear the “mom they’re too mushy” from the kids? They’re the perfect bananas to use for this recipe.
You just mash the banana in a large bowl with a fork. Really get in there and mash it down especially if your kids don’t like chunks.
Next you’ll add in some flour, cinnamon and an egg.
Whisk everything together and cook over medium heat. I cook them about 3-5 minutes on each side or until they’re a nice golden brown color.
I serve them up with a side of strawberries for a delicious breakfast or snack anytime of day.

I substituted regular flour for gluten free flour and it turned out awesome! I also added a dash of nutmeg and some vanilla extract, too.
