Blueberry Cinnamon Muffins with Crunchy Cinnamon Topping

New year, new me. That’s my mantra this year. Instead of making a whole hefty list of resolutions that I won’t follow after a few weeks. I’m making little tweaks and changes to things I already do, starting with the food I eat. I’m a snacker and since I work from home I have access to a bunch of things I shouldn’t really eat throughout the day (ahem….my son’s snacks). Sometimes it’s just easier for me to grab a bag of something to snack on then to actually make myself something better. To help change that, I’ve decided that Sundays will be my snack making days. I’m going to create some yummy treats just for me, like these delicious Blueberry Cinnamon Muffins made with Quaker® Life Cinnamon cereal, to have on hand throughout the week. That way when hunger strikes and I’m looking for something quick, I know right what to go to.

I picked up everything I needed for this recipe from my local Walmart. In addition to an amazing grocery department, they also have a fresh produce section so I was able to get these delicious blueberries right there. Gotta love convenience! These muffins are easy to make, have loads of flavor and the crunchy Quaker® Life cereal topping are just what they needed to make them mouthwatering.

Cinnamon Blueberry Muffins
Ingredients for Muffins:
  • 2 cups of flour
  • 3/4 cup of sugar
  • 1/4 cup of brown sugar
  • 1 tsp. of baking powder
  • 1 tsp. of cinnamon
  • 2 eggs
  • 1 tsp. of vanilla
  • 1/2 cup of milk
  • 3 tablespoons of butter – softened
  • 1 cup of blueberries (fresh or frozen will work)

Ingredients for Quaker® Life Crunchy Topping:
  • 1 tsp. of cinnamon
  • 1 tsp. of brown sugar
  • 3 tbsp. of butter softened
  • 1/2 cup of Quaker® Life Cinnamon Cereal crumbled.
Directions:
Step 1: Combine dry ingredients in a bowl and mix together. 
Step 2: Add in remaining ingredients (except the blueberries) and mix well. Gently fold in blueberries.
Step 3: Fill muffin pan at least 3/4 of the way full. 
Step 4: In a bowl, crumble the Quaker® Life Cinnamon Cereal into little pieces with your hands. 
Step  5: Add in cinnamon, brown sugar and butter and mix well. 
Step 6: Sprinkle topping on top of muffins in generous amounts.
Step 7: Bake in a 350 degree oven for about 30 minutes or until a stick inserted into the center comes out clean. 
Enjoy warm from the oven and store the rest as snacks for the week.
