I was in charge of dessert for one of our Cub Scouts meetings and of course had to do a something cute, I couldn’t just bring plain cupcakes! So after scouring Pinterest I came across cute campfire cupcakes. They looked easy enough to replicate so off I went.
To make the “fire” you need a bag of butterscotch and cinnamon candy disks. After I unwrapped each one, I placed them in a ziploc bag and hammered them to mash them into little pieces.
Once they are all mashed up, put them on cookie sheet lined with foil and bake in the oven until melted. Unfortunately, I didn’t take a picture after I took them out of the oven, but it will all be melted together and swirled all nice. Once it cools, break them apart into little pointed pieces to look like flames.
Bake your cupcakes as you normally do and add the flame pieces to the icing. For the sticks, break up pretzels sticks into pieces and arrange on top to look like a campfire. Last add a mini marshmallow to the stick and that’s it.
If I had more time, I would have crushed up chocolate cookies to sprinkle on the icing to look like dirt but for a last minute dessert, I was pleased and the kids LOVED them!
