When you’re pressed for time but still need to get a dinner on table try this easy weeknight dinner idea – Pizza & Caprese Salad. The salad is full of flavor and pairs perfectly with the pizza.
Living in a small town is so very different than where I grew up. Both have their unique benefits and draw and their differences as well but one thing they both have in common is their support of local sports. When I was in high school, Friday nights were spent at the football field watching the rival schools play. My friends and I would meet up for pizza then head to the field and that was the highlight of our weekends. Now that I’m a mom and living in a new town, it’s really no different. High School football is still a big deal and it’s still a fun thing to do with the kids.
Pretty soon I may even be the mom of one of those kids playing on the field. My oldest has already decided he wants to play football once he gets to high school. I’m still a few years off but I can still help support our local teams and you can too with this giveaway from Tony’s Pizza. You could win $3,000 in cash prizes for a qualifying high school team as well as hundreds of Walmart gift cards! You can enter this great giveaway below:

I try to switch up our side dishes on pizza night but one dish my family requests over and over again is this Caprese Salad. I’ve put my on spin on a traditional Caprese Salad but it’s oh so delicious and you’ll have your family begging to make it over and over again too!
The fresh mozzarella, basil and lemon flavors combine with each other perfectly for a mouthwatering masterpiece.
It’s a really simple salad to make too. Just a base of fresh baby spinach leaves, topped with grape tomatoes and mozzarella pearls mixed with fresh parsley, basil, garlic, lemon zest then drizzled with a lemon balsamic dressing.
First you’ll make the dressing which is just 3 ingredients – olive oil, balsamic vinegar and fresh lemon juice. Once that’s mixed set it aside as you chop up your fresh herbs.
In a small bowl combine the chopped basil, parsley, minced garlic and lemon zest.
Then pour over your tomatoes and mozzarella pearls. Toss gently to cover.
Pour the tomato mixture over the spinach and drizzle with the dressing.
Ya’ll this is good. Oh. So. Good.
It paired so well with our Tony’s® Pizzeria Style Pepperoni Pizza and would be delicious by itself.
No matter how you decide to enjoy this Caprese Salad, just make it and prepare for your tastebuds to rejoice.
