When I was grabbing the M&M’s at Walmart I made sure to pick up some red velvet cake mix and a bag of blue cake mix to make each layer of the cake. Sometimes I bake from scratch but at 8 1/2 months pregnant, that wasn’t happening. I wanted easy and they already had the colors I needed so it worked out perfect. If you have a favorite cake recipe you could always use that and just add food coloring to get the desired colors. Since my son loves to help in the kitchen, he started mixing the cake mixes and we baked them according to the package. Since I’ve been craving some homemade buttercream icing, I went ahead and made that from scratch since that is pretty easy.
- 1 cup (2 sticks) of softened salted butter
- 4 cups of Confectioners Sugar
- 2 teaspoons of Vanilla
- 4 tablespoons of milk (more or less depending on your desired consistency)
To make sure the colors didn’t mix too much, I added ice to the glass and filled it about a 1/3 of the way with fruit punch. Add more ice and some blue Gatorade. Top with a little more ice and 7 Up and you have an easy drink.
