Over the last few months, my oldest has really taken an interest in cooking. He’s been cooking with me since he was old enough to walk, and he’s turned into quite the little chef. He’s even at the point that I can count on him to make an easy dinner for us now. While he still has a lot to learn, spending time together in the kitchen is one of my favorite things to do. We love cooking together and creating memories in the process. This Cheesy Beef Enchilada Casserole is one of our favorite recipes to make and to eat. Everyone loves it.
We put a spin on one of my favorite dishes when I was growing up. My mom would make a similar dish, but she added chicken, corn and beans to it. Since I’m not a fan of corn, I put my own spin on this recipe and changed it up a bit to my family’s liking.
I love this recipe because of how easy it is to make. It’s a dish that’s ready in under 30 minutes, so less time in the kitchen and more time with my family.
It’s one of those recipes perfect for busy weeknights, and it’s great for parties.
You can even make this ahead of time and keep it in the fridge for a school night dinner. I’ve been known to make this ahead of time, especially if I know we have a busy night coming up.
This way, I can just grab it from the fridge and pop it in the oven for dinner while I’m helping the kids with homework.
This is actually one of my son’s favorite recipes to make and one of my family’s favorite to eat.
That’s probably because it is full of cheesy goodness, and we love cheesy goodness in this family. We make sure to add plenty of Borden® Cheese Finely Shredded Sharp Cheddar Shreds & Borden® Cheese Finely Shredded Cheddar Jack Shreds in the layers of the casserole.
And then plenty more cheese on top. You can really never have enough cheese in this recipe. It’s so good.

Cheesy Beef Enchilada Casserole
- 1 lb ground beef
- 2 cloves of garlic
- 1 tsp. taco seasoning
- 1 can or packet of enchilada sauce
- 1/2 cup of medium salsa
- 2 tbsp. freshly chopped cilantro
- 2 1/2 cups Borden® Cheese Finely Shredded Cheddar Jack Shreds
- 5 flour tortillas
- Preheat oven to 350 degrees.
- Brown Ground beef
- Add in minced garlic, enchilada sauce, salsa, cilantro and taco seasoning and stir. Cook for 3-5 minutes.
- Slice tortillas into pieces.
- Place layer of tortillas at bottom of casserole dish.
- Alternate layers of meat, cheese and tortillas until meat is gone.
- Top with layer of tortillas and plenty of cheese on top
- Bake in over for 10-15 minutes or until cheese is melted and bubbly.
