As Summer begins to wind down, I’ve already begun to focus my attention on back to school. That means combining busy afternoons with homework, after school activities and sports with trying to fit in time for cooking so the kids can eat before we head out to whatever activities we have going on. With busy nights like this, I can’t spend hours in the kitchen cooking. Instead I stock up on everything I need for easy dinners from Walmart. It’s completely possible to get a delicious, home cooked dinner on the table in under 30 minutes. This Cheesy Chicken Enchilada Casserole is one of those dishes. It’s easy to make, ready in under 30-minutes and it’s something the whole family will love.
Chicken enchiladas were one of my favorite dinners growing up. I remember looking forward to them every time there were on our dinner menu. This is a fun take on traditional chicken enchiladas that is really simple to make on those busy school nights.
With just a few simple ingredients, you’re on your way to a delicious dinner in no-time at all.
To save even more time, this recipe can use grilled chicken or a rotisserie chicken (which I used here), some salsa, enchilada sauce layered between tortillas and plenty of cheese.
When the school year rolls around, I’m more strict with my meal planning. It helps me with my grocery shopping since I know exactly what I need when I’m shopping and I don’t have struggle with what I’m going to make each night.
Cheesy Chicken Enchilada Casserole
- 1 rotisserie chicken
- ½ cup enchilada sauce
- 1 cup Pace® Salsa
- 2 cups of shredded cheddar cheese
- 4 large tortillas
- Cilantro
- ½ to mato diced
- In a large bowl mix shredded chicken, enchilada sauce, Pace® Salsa and 1 tablespoon of chopped cilantro.
- Cover bottom of pan with with more salsa, place tortilla on top. Then layer chicken mixture, cheese and repeat until all tortillas and chicken are used.
- Cover with more cheese and diced tomatoes.
- Bake at 350 degrees for 15-20 minutes or until cheese is melted.

I was just telling hubby the other day, that I have never made enchiladas. Maybe I should make this casserole for him instead. Looks really good and I am sure he would love it.

I love quesadillas, well just about all Mexican food. One thimg I will not ever put in a recipe though is Fennel or Cilantro. Cilantro is the most vile tasting leaf I have ever tasted. And anything that tastes like licorice is the second!
