Steak Kabobs with Chimichurri Sauce

These Chimichurri Steak Kabobs are the perfect reason to fire up the grill. Delicious sirloin marinated in homemade chimichurri sauce is the perfect dinner any night of the week.

It’s no secret that I love chimichurri sauce. I make it fresh at least once a week and have shared a few of my favorite ways to use it right here on the blog. Today I’m sharing another family favorite recipe using the sauce, Chimichurri Steak Kabobs.

They’re one of those dinners that are effortless but taste oh-so-amazing. These kabobs are easy to cook on the grill and it’s one of my go-to grilling recipes.

In fact, these steak kabobs with homemade chimichurri sauce are one of the first grilling recipes I taught my teenage son to cook aside from hot dogs and burgers.

CAN I ADD ANYTHING ELSE TO THE CHIMICHURRI STEAK KABOBS? 

Lots of vegetables would be the perfect addition to these steak kabobs. Zucchini, tomatoes, pepper and even yellow squash.  Feel free to layer your favorite vegetables in between the pieces of steak for a colorful and flavorful touch. 

WHAT DO I NEED TO MAKE STEAK KABOBS WITH CHIMICHURRI SAUCE? 

The ingredient list for this recipe is pretty short. You just need steak pre-cut or cut into 3/4-in squares and my homemade chimichurri sauce. Most of those ingredients you probably already have in your kitchen. You’ll also need:

  • skewers – metal ones or wood ones that have been soaked in water
  • tongs
  • a large ziplock bag

HOW LONG DOES IT TAKE TO COOK STEAK KABOBS?

Once they’re ready to be cooked, you only need to grill them 4-5 minutes per side or until the internal temperature reaches 145°F for medium-rare kabobs.  

WHAT CUT OF STEAK DO I NEED FOR THE KABOBS?

For this recipe, I just grabbed a pack of stew meat from Costco but you can use sirloin steak, flat iron, or ribeye. Just be sure to cut them into 3/4-in squares.  Bigger chunks will take a few more minutes.

HOW TO MAKE CHIMICHURRI STEAK KABOBS

Chimichurri Steak Kabobs

Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes

These Chimichurri Steak Kabobs are the perfect reason to fire up the grill. Delicious sirloin marinated in homemade chimichurri sauce is the perfect dinner any night of the week.

Ingredients

  • 2 lbs. steak - cut into 1 in. cubes
  • 1 -2 tablespoons Extra Virgin Olive Oil
  • fresh parsley - optional
  • For the Chimichurri Sauce
  • 2/3 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1/2 cup chopped, flat-leaf parsley
  • 5-6 cloves of garlic, chopped
  • 1 teaspoon dried oregano
  • 1 1/2 teaspoon red chili flakes
  • 1 teaspoon salt, I only use Redmond's Real Salt
  • 1 teaspoon black pepper

Instructions

  1. Make the sauce by combining olive oil, red wine vinedar, parsley, garlic, oregano, red chili flakes, salt and pepper in a bowl and stir to combine.
  2. Reserve 3-4 tablespoons of chimichurri sauce in a bowl and set aside.
  3. Cut steak into 1-inch cubes and put in large ziploc bag. Pour chimichurri sauce over steak and let marinage for 15 minutes.
  4. Pre-heat grill to medium-high heat
  5. Place steak cubes on skewers (make sure wood ones have been soaking in water before use)
  6. Grill kabobs 4-5 minutes on each side. Internal temperature should be 145 degrees F for medium rare.
  7. Once done, remove from heat and pour reserved chimichurri sauce on top.
  8. Add more fresh parsley for garnish
  9. Serve immediately

Notes

If you have the time, you can let the steak marinade in the chimichurri sauce for an hour but 10-15 minutes is fine if you're in a rush.
