If you’ve had Coquito before you know just how delicious this coconut drink is. Typically served during the holidays, Coquito originated in Puerto Rico. It’s the island version of eggnog just more delicious and no egg (well, you can make it with egg but I don’t). Coquito means “little coconut” and it’s one of my favorite parts of the holidays. But it doesn’t have to be only a holiday drink anymore. Now you can enjoy the delicious taste of Coquito all year long with this Coquito Popsicle recipe.
I love Coquito so much that I’ve incorporated it into all kinds of recipes like these Coquito Cupcakes with Coquito Whipped Cream Icing and of course, my traditional Coquito recipe.
And now these Coquito ice pops.
Try to eat just one. I dare you.
I’m warning you now that it will be hard to only enjoy one. They’re that good.
But don’t worry. No one is going to judge you when you eat a few of these as a snack or after dinner.
While these are boozy popsicles, you can easily adapt the recipe for the younger crowd.
To make these kid friendly, just follow the recipe and leave out the alcohol. That way the kiddos can enjoy these creamy coconut popsicles with the rest of the family.
Because the kids will love them just as much as the adults do. In fact, these are my daughter’s favorite popsicle recipe ever.

HOW TO MAKE COQUITO POPSICLES
Making these Coquito ice pops is fairly easy. It’s as simple as blending all the ingredients in a blender and freezing in your favorite popsicle mold.

Coquito Popsicle Recipe
Coquito isn't just for the holidays anymore! Enjoy these Coquito Popsicles all year long!
Ingredients
- 1 12 oz. can evaporated milk
- 1 15 oz. can cream of coconut
- 1 13.5 oz. can of coconut milk
- 1 can sweetened condensed milk
- 1 tsp. vanilla extract
- 1 tsp. cinnamon
- 3/4 cup of rum (optional)
Instructions
Blend all ingredients in blender until smooth.
Pour into popsicle mold
Freeze 4-6 hours or until frozen
Notes
To make these kid friendly, just omit the alcohol. They're just as tasty.

How does this supposedly freeze if it has alcohol in it? I can't imagine it will become solid enough to be a popsicle. Am I missing something?
