If I had to pick my favorite season of the year, hands down it would be summer. There’s just something about the warm weather and time spent outdoors that just makes my heart happy. Once the weather warms up, dinner outside on the deck becomes a daily routine and it’s time to start indulging in all of our favorite summer foods like corn on the cob. Thankfully Sunshine Sweet Corn, which is grown in Florida, is available now and I don’t have to wait any longer to enjoy this family favorite! I picked up some the other day to make this delicious Corn and Seafood Clambake.
To me, this recipe just screams summer and it was so easy to make! It will definitely be making appearances at all of our upcoming BBQ’s and family dinners. It was the perfect dinner and everyone devoured it. Best of all, it was super easy to cook. I always thought a clambake would be so much work and it’s totally not.
It’s one of those recipes that once you make it and see just how easy it is, it quickly becomes something you make much more frequently. It’s great for a family dinner or even a special treat for a special occasion. Whatever you make it for, you won’t be disappointed with this Corn and Seafood Clambake.
The star of this recipe was definitely the Sunshine Sweet Corn. Sunshine Sweet Corn is a non-GMO, extra tender sweet tasting corn that is available in April and May. One taste and you’ll be hooked on this delicious corn. My family is! I made sure to pick up plenty to give them an early taste of summer by whipping up their favorite recipes.
Fresh Corn and Seafood Clambake
- 3 tbsp. butter
- 1 cup diced onion
- 1 tsp. minced garlic
- 1 cup chopped tomatoes
- 1/2 cup water
- 1 cup chicken stock
- 4 ears Sunshine Sweet Corn halved
- 1 dozen cherrystone clams – scrubbed
- 15-20 medium sized shrimp peeled and deveined
- In a Dutch over or large saucepan, melt butter over medium heat.
- Add in garlic and onion and cook 5 minutes.
- Add tomatoes, water and chicken stock and bring to a boil.
- Add in corn, clams and shrimp. Cover and cook 10 minutes or until clams open.
- Discard any clams that did not open. Garnish with parsley and serve immediately
