Holiday dinners with my family is an all-day affair. Guests usually arrive sometime mid-morning and we all gather in the kitchen finishing up the food planned for the day and it’s usually pretty late before anyone leaves. Especially at Thanksgiving when it’s really an all-day event since the girls usually head out for a little Black Friday shopping late in the day. So in addition to our typical dinner menu, I like to plan out easy finger foods that I can serve throughout the day. This year, these Cranberry Brie Chicken Bites will be going on all my holiday menus.

I think I especially love how easy they are to make. That’s important to me on a day like Thanksgiving when my kitchen is tied up making food for the main event. I want something simple and easy that can throw together in just a few minutes.
The Cranberry Brie Chicken Bites are great for those last minute get-togethers too. You know the ones where your doorbell rings and it’s a surprise visit from family or friends. Thankfully these can be whipped up in just a few minutes and they’re sure to please anyone.
The star of the recipe is the Sandwich Bros. of Wisconsin Chicken Melts. They are great by themselves but with just a few simple additions they’re transformed into these delicious.
All you need is a can of whole cranberry sauce, a wheel of Brie cheese, a few boxes of Sandwich Bros. of Wisconsin Chicken Melts and some fresh rosemary.
I cut each chicken melt into threes to make them more appetizer friendly. Then I topped each with a piece of Brie cheese, a spoonful of cranberry sauce and some rosemary.
Pop these little babies into the oven for about 10-12 minutes and that’s it! When you open your oven, you’re hit with such delicious smell, it’s hard not to start eating them instantly.
Try to save them for your guests. Trust me. They’ll thank you and will probably be begging you for the recipe!

Thanksgiving is an all day affair for my family as well. This year, I'm also volunteering to help deliver Thanksgiving meals to low-income households in the area, so I'm extra excited about that as well. This recipe looks aabsolutely divine. I've never had anything like it. I'd love to give it a try. Yum!
