Being a busy family it’s sometimes hard to make sure we are eating properly and getting the essential vitamins we need. I try to make sure we eat well balanced meals everyday, but sometimes the inevitable happens and we grab fast food or something not so healthy. I definitely find it easier to eat healthy, nutritious meals when I purchase the food ahead of time and plan out my meals for the week.
One things I always hear about are Probiotics and how they are really good for you and for your digestive health. Aside from yogurt, I really didn’t know where else to find probiotics until I came across from Lifeway Kefir Cultured Milk Smoothies.
Not only are is LIfeway Kefir a great base for smoothies and things like that, but you can also use it in everyday recipes. Since it’s summer and blueberries are plentiful here in New Jersey, I always have my fridge stocked with them. So I thought blueberry pancakes would be perfect for breakfast this weekend.
These made from scratch pancakes are jam packed with healthy antioxidants from the blueberries and plenty of probiotics by adding Lifeway Kefir to the mix. Not only are they healthy but they are absolutely delicious. My whole family ate them up and were asking for more.
Making pancakes from scratch is not as difficult as one may think. In fact, most people probably already have most, if not all, of the ingredients needed on hand already. With just a couple of extra steps you can have healthy, delicious homemade pancakes in no time at all.
In a large bowl mix the flour, sugar, baking powder and salt together. Next, add in the wet ingredients and gently mix together. You don’t want to over mix here. It’s ok if the batter is slightly lumpy. It will look something like this.
Next add in about one cup of blueberries.
Cook pancakes on a griddle (which I need to invest in one of these days) or a regular ole frying pan like me.
Now you can add a slap of butter and your favorite syrup to these babies…….
or you could be like me and top them with this yummy homemade blueberry syrup.
It’s such a simple syrup to make and really adds a nice touch to the pancakes. You’ll need some more blueberries, some sugar and water. That’s it. Add all the ingredients to a pan and bring to a boil.
Cook for 5 minutes stirring to avoiding scorching. You’ll see the blueberries begin to break down and the syrup will start to turn a deep purple color.
Simmer for another 5-10 minutes until the mixture starts to thicken. Remove from heat and let cool.
Spoon a tablespoon or two of the blueberry syrup over your pancakes and add a dollop of whipped cream.
All that’s left is to enjoy these yummy pancakes!
Homemade Blueberry Pancakes
Pancake Ingredients:
- 1 1/2 cups of flour
- 3 tablespoons of sugar
- 1 teaspoon of baking powder
- 1/4 teaspoon of salt
- 1 egg
- 1/4 cup of milk
- 1 cup of Lifeway Kefir Cultured Milk Smoothies – Plain
- 2 tablespoons of butter – melted
- 1 1/2 teaspoons of vanilla
- 1 cup of blueberries
Mix together flour, sugar, baking powder and salt. Add in egg, milk, Lifeway Kefir, vanilla and butter. Gently mix together being careful not to over mix. Add in one cup of blueberries. If the batter is too think add a little more milk. The batter should be able to be spooned into the pan.
Add butter to griddle or pan and spoon batter onto pan to make pancakes. I used a large size cookie scoop to try and make them even but you can always use a tablespoon or whatever method you currently use to pour your batter. Cook pancakes
Blueberry Syrup Ingredients:
- 1 cup of blueberries
- 1/4 cup of water
- 1/2 cup of sugar
In a medium sauce pan combine the blueberries, water and sugar. Bring to a boil. Cook for 5 minutes -stirring to avoid scorching. Simmer for another 5-10 minutes until mixture thickens. It should coat the back of a spoon or spatula. Remove from heat. Let cool for a few minutes then spoon over pancakes.
