If there’s one thing we love to do during the summer it’s spend time with family and friends. It’s not uncommon for there to be a picnic at our house every weekend when the weather is warm. Entertaining that much, means I need to make sure I change up our menu every so often so I’m not serving the same dishes every week. Sometimes I’ll just switch up a side dish or two. Thanks what I love about pasta salad. It’s such a versatile dish and can be made in so many different ways.
We knew we were having a picnic this past weekend to kick off summer and I wanted to change up the typically pasta salad I served. This year I started a container garden and am growing so many delicious herbs that I wanted to incorporate them into the recipe as well.
This recipe calls for just a few simple ingredients and can be easily thrown together in about 15 minutes. We picked up the few ingredients we didn’t already have on hand while we were at Walmart. My oldest, who loves to help me in the kitchen, picked the Barilla® Mini Penne pasta which was the perfect size pasta for the dish. I was originally using regular Penne but I loved the mini so much more.
- 1 Box of Barilla® Mini Penne Pasta
- 8 Slices of Deli Sliced Pepperoni
- 1 1/2 cups of Cherry Tomatoes
- 1 cup of fresh spinach leaves
- 1 cup of mozzarella cheese diced
- 3 -4 large sized basil leaves
- 4 tablespoons of Extra Virgin Olive Oil
- 1 glove of garlic
Boil pasta according to package directions.
Slice 8 slices of pepperoni into bite sized pieces (smaller pepperoni will also work)
Chop mozzarella cheese, cherry tomatoes and spinach and set aside.
Add 4 tablespoons of olive oil to a small bowl and chop or press 1 clove of garlic into oil.
Once pasta is cooked, drained and cooled transfer to a large bowl and drizzle with garlic infused olive oil. Stir to coat.
Add in chopped mozzarella, spinach, tomatoes and pepperoni.
Chop the fresh basil and add to pasta.
Gently mix ingredients together.
Serve immediately or refrigerate until ready to use.
This was a hit with my family and friends and one of my favorite pasta salads, I can’t wait to make it again!
