Easy & Delicious Spinach Pasta Carbonara {Recipe}

Spinach Carbonara
I love pasta. Pasta and cheese. Any dish that combines the two I know will be a hit with my family. If it’s something I can cook in 30 minutes or less then I love it even more. This Spinach Pasta Carbonara is both of these. A quick and delicious dinner that really hits the spot.
Spinach Pasta Carbonara

I’ve always loved Pasta Carbonara but have never attempted to make it at home. Probably because of the peas. I don’t like peas and neither do my husband or son so it’s never been at the top of my list to make. Plus I’ve heard friends say how it was time consuming to cook and I’m all about quick meals.

When I saw Quick Pasta Carbonara recipe, I thought hey it’s quick so why not. I was also craving bacon. Mmmmm bacon. The only problem was that recipe called for peas, those pesky peas.

Spinach Pasta Carbonara

Instead of using peas, I went with my favorite green vegetable of choice – spinach. Combine that with      garlic and freshly grated parmesan cheese and I put my own spin on the traditional version that my family loved.

  • 3 eggs
Step 1: Cook pasta according to package directions.

Step 2: While pasta is cooking, cook the bacon. When finished, drain on paper towel and chop into pieces.

Step 3: Chop spinach into pieces and set aside.

Step 4: Grate parmesan cheese and gently mix with 3 eggs. Set bowl aside.

Step 5: In another pan, combine cream cheese, garlic and milk and cook on low until cheese is melted.

Step 6: Once pasta is cooked, drain and immediately return to pan. Slowly pour egg and parmesan cheese mixture over hot pasta stirring to coat all noodles.

Step 7: Pour cream cheese and milk mixture over top and stir to coat.

Step 8: Add in cooked bacon and spinach and serve immediately.
