I’ve always loved Pasta Carbonara but have never attempted to make it at home. Probably because of the peas. I don’t like peas and neither do my husband or son so it’s never been at the top of my list to make. Plus I’ve heard friends say how it was time consuming to cook and I’m all about quick meals.
When I saw Quick Pasta Carbonara recipe, I thought hey it’s quick so why not. I was also craving bacon. Mmmmm bacon. The only problem was that recipe called for peas, those pesky peas.
Instead of using peas, I went with my favorite green vegetable of choice – spinach. Combine that with garlic and freshly grated parmesan cheese and I put my own spin on the traditional version that my family loved.
Prep Time: 10 minutes – Cook Time: 20 minutes
- 1 box of pasta – I used rigatoni
- 8 pieces of bacon
- 4 oz Cheese (1/2 of an 8 oz bar)
- 1/2 cup freshly grated Parmesan Cheese
- 1/2 cup chopped spinach
- 3/4 cup of milk
- 3 gloves of garlic chopped
- 3 eggs
Step 3: Chop spinach into pieces and set aside.
Step 4: Grate parmesan cheese and gently mix with 3 eggs. Set bowl aside.
Step 7: Pour cream cheese and milk mixture over top and stir to coat.
Step 8: Add in cooked bacon and spinach and serve immediately.
