Dinner time can be a bit of a challenge around here with a husband who works a crazy shift. Some nights he misses dinner so I try to plan my meals around his schedule whenever I can. On nights I know he’s working late, I’ll typically make a quick dinner for the kids and I or we’ll have leftovers. I save cooking the meals for nights he’s actually home to enjoy it.
