We were home in time for our favorite day of the week – Taco Tuesday! Instead of me missing out on Taco Tuesday, I can just whip up this delicious Taco Salad (and the kids can just put it on their taco shells). Chop romaine lettuce and place in a bowl. While that’s cooking chop tomatoes, onion, garlicand jalapeño pepper. If your pressed for a time, a jar of salsa will work just as good. Slice avocado and shred your cheddar cheese.
Add taco skillet sauce to beef for the last ten minutes of cooking.
Assemble the meat, cheese, avocado and salsa in a large bowl.
Serve immediately. If your kids are picky eaters like mine are and won’t like the idea of a salad, just set out soft or hard taco shells for them to enjoy.
