A couple of months ago, I started the Keto diet to great results. It not only helped me curb my sugar addition but it gave me a new appreciation for foods I wouldn’t have eaten before. Since I’m the only following Keto in my house, I’ve tried to not make any extra work for myself when it comes to dinnertime. We’re always on-the-go so the last thing I want to be doing is cooking two different meals every night. Instead, I’ve tweaked recipes to feed all of us like this Easy Taco Salad. The kids can assemble it on a taco shell and I can eat it as is. Dinnertime is easy peasy thanks to a freezer full of delicious meats from ButcherBox.com – the meat delivery subscription box.
Since Keto has a strong focus on meat, dinners lately have had a heavy focus on meat, fish and poultry. Gone are the pizza and pasta nights. That’s why I was so excited to try ButcherBox.com.
ButcherBox.com lets you pick from one of their curated boxes or you can customize your own with a selection of high-quality beef, pork, chicken and salmon. Ordering couldn’t be easier and in a few short days my box arrives right at my door.
This saves me so much time so I can focus on other, more important things like planning our next trip!
It’s important to me what I feed my family. With ButcherBox, I know I’m getting top-quality meat to not only feed my family but I can feel comfortable recommending it to my readers.
Now that we’re back home after over a month of traveling, it’s back on the Keto wagon for me. Our box arrived right before we left for our trip so it was nice coming home to a freezer full of food and not having to worry about hitting the grocery store.
We were home in time for our favorite day of the week – Taco Tuesday! Instead of me missing out on Taco Tuesday, I can just whip up this delicious Taco Salad (and the kids can just put it on their taco shells). The crunchy lettuce gives me the crunch I’m looking for without feeling like I’m missing something.
I try to avoid the box taco kits dinners anyway and use tortilla shells and homemade seasonings. No packets over here.
When I’m pressed for time a simple mix of taco skillet sauce gives the meat an out of this world flavor that you can’t get in a powder.
Having a freezer full of meat ready to be eaten helps me cut back on all the eating out we usually do.
Trust me when I tell you this taco salad recipe could not get any easier. Simply thaw a pack of ButcherBox.com 100% grass-fed beef and cook until no longer pink.
Chop romaine lettuce and place in a bowl. While that’s cooking chop tomatoes, onion, garlicand jalapeño pepper. If your pressed for a time, a jar of salsa will work just as good. Slice avocado and shred your cheddar cheese.
Add taco skillet sauce to beef for the last ten minutes of cooking.
Assemble the meat, cheese, avocado and salsa in a large bowl.
Serve immediately. If your kids are picky eaters like mine are and won’t like the idea of a salad, just set out soft or hard taco shells for them to enjoy.
That’s it! A delicious low-carb dinner that’s ready in under 20 minutes. That’s quicker than what it would take to drive to a fast food restaurant! This literally is my go-to dinner on nights that I don’t feel like cooking and need something in a pinch.
I can pretty much guarantee everyone will eat it. Plus it’s easy to customize this dish. Add in different flavors of salsa for a fun twist.
