Quick and easy dinner ideas are my speciality. Evenings are busy around here and while I’d love nothing more then to spend my night cooking, time doesn’t allow it. But that doesn’t mean I can’t get a delicious dinner on the table quickly. Even better when the kids exclaim “Wow, mom. That was delicious”. That was exactly the case when I made these Quick and easy Fish Sandwiches with Crunchy Cilantro Lime Slaw.

Gorton’s Premium Cod Fillets are wild caught, have no artificial ingredients and are cut from whole fillets. They’re made with crunchy panko breadcrumbs for a delicious crunch in every bite.

A delicious cilantro lime slaw was the perfect topping for these fillets.
I love cilantro and cook with it all the time. Truthfully I can’t get enough so I try to incorporate it into a lot of our meals. It’s just so good!
Plus it’s simple to throw together. Grab a bag of slaw already cut or cut your own either way it’s delicious.
Once the Gorton’s Premium Cod Fillets were cooked, I toasted the rolls in the broiled for a few minutes, added fresh slices of cheddar cheese and placed the cod fillets on top.
Then I just added a heaping portion of the cilantro lime slaw right on top. If there was a perfect fish sandwch, this would be it.
Crunchy, delicious and so full of flavor. It’s no surprise that it’s one of my family’s favorite recipes.

Fish Sandwiches with Crunchy Cilantro Lime Slaw
- 1 box Gorton's Premium Cod Fillets
- 4 slices Cheddar Cheese
- 4 Rolls
Cilantro Lime Coleslaw
- 1 bag Coleslaw Mix
- 2 tbsp Fresh Lime Juice
- 1/4 cup Fresh Cilantro
- 1 container Greek Yogurt
- 5 cloves garlic
- Cook Gorton's Fish Fillets according to package directions.
- In blender, combine lime juice, cilantro, yogurt and garlic. Pour over coleslaw mix. Set aside.
- Place fish fillet, cheese and slaw on roll. Serve immediately.
