I remember waking up while it was still dark out holding my little fishing pole and tackle box while waiting for my dad to pack the lunches for the day. Catch or no catch, I still had so much fun and looked forward to those trips every weekend. Times have changed and now that I’m a parent, fishing is a tradition that I couldn’t wait to start with my own kids. My husband grew up fishing and is now the fisherman of the family creating those same memories that I cherish with our own kids.
Both of my kids have been fishing since they could walk. Now that my first born isn’t a little guy anymore, one of his favorite things to do is surf fish. If it’s a nice day during fishing season, it’s a safe bet you’ll find him and my husband at the shore fishing.
Each one trying for their next big catch. Not only do they enjoy catching an array of fish from the Jersey shore, they enjoy cooking and eating them too. So when they catch something, they’re pretty excited to bring it home and cook it up.
Like this fluke they caught on their last trip. I wasn’t expecting to cook a fish that night so instead, they filleted it to freeze for another day. Of course we want the fish to taste as fresh as can be when we’re ready to eat it and we’re always looking for ways to keep our fish fresh, longer.

When we were ready to eat the fluke for dinner, it tasted just as fresh as it would it we just caught it. I made these delicious Lemon Garlic Butter Fluke Foil Packs that were so simple to make and full of flavor.
This is going to be my go-to summer fish recipe whenever they bring home a fluke. All I needed was butter, lemon, garlic, parsley and a little parmesan cheese.
We had a delicious dinner that just screamed summer.
I cooked them on the grill but you could also cook them in the oven if you prefer. Serve over rice or with a side salad for a delicious summer dish.
Lemon Garlic Butter Fluke Foil Packs
- 5 Lemons
- Handful of parsley chopped
- 10-15 cloves of garlic chopped
- 1 stick of butter
- Zest from one lemon
- 6 pieces of fluke
- Olive Oil
- Preheat grill to 400 degrees
- Thinly slice 4 lemons and set aside
- Zest one lemon and set aside
- In the center of piece of foil (large enough to make a packet) place 3 lemon slices
- Place one piece of fluke on top of lemons
- Sprinkle with salt, pepper, some lemon zest and a drizzle of olive oil
- Spoon garlic onto fish to taste (I like garlic so I add a lot)
- Place 3 chunks of butter on top of fish
- Top with two more lemon slices
- Seal foil pack
- Repeat for remaining pieces of fish
- Place on hot grill and cook for 15 minutes or until fish is done
- Sprinkle with parsley and freshly squeezed lemon juice
- Serve immediately
