Grilled Heirloom Tomato Pizza with Feta & Hot Honey

I’ve gone overboard on planting tomatoes the last two years. We love to eat them fresh off the vine, in delicious recipes like this tomato and cucumber salad and homemade tomato soup or on top of pizzas like this delicious Heirloom Tomato Pizza with Feta Cheese and Hot Honey.

This grilled pizza is delicious meal that’s perfect for lunch or dinner and comes together quickly for busy nights. 

It’s no wonder we’ve had this recipe, or a version of this recipe, four times over the last two weeks.

The tastes combine perfectly and it’s just that good. 

WHAT INGREDIENTS DO I NEED TO MAKE THIS HEIRLOOM TOMATO PIZZA

One of the great things about this grilled pizza recipe is just how easy it is to make. It doesn’t take a lot to make this so it’s great for busy nights and those nights you don’t really feel like cooking but you gotta eat!

You’ll need some olive oil, fresh mozzarella cheese, feta cheese crumbles, baby spinach leaves, heirloom cherry tomatoes, salt, pepper and if you like things a little spicy, some Mike’s Hot Honey or your own homemade hot honey.  Oh a pizza crust. You can use homemade but I was going for quick and easy here so I used a pre-made crust.

HOW LONG DOES IT TAKE TO GRILL THE PIZZA?

Once you’ve assembled your pizza it really doesn’t take long to cook. On my grill, set to medium to high heat, it only takes about 8 minutes.

But you’ll want to start watching it around the 6 minute mark to make sure it doesn’t burn.

DO I HAVE TO USE FETA CHEESE? 

Not at all. I personally love feta cheese and it combines perfectly with the other flavors on this pizza but if you’re not a fan, leave it off. Just use the mozzarella or maybe add some freshly grated parmesan cheese. 

That would be delicious too.

This Heirloom Tomato & Feta Grilled Pizza is the perfect summer pizza recipe. Grab some delicious heirloom cherry tomatoes from your garden or your local farm stand and enjoy this delicious pizza any night of the week.

Ingredients

  • 2 ready made pizza crusts
  • 1 pint heirloom cherry tomatoes
  • 8 - 10 slices of fresh mozzarella cheese
  • 1/2 cup of feta cheese crumbles
  • 5-6 basil leaves
  • 1 tablespoon olive oil
  • Mike's Hot Honey to taste
  • Salt & Pepper to taste
  • 2 cups fresh, baby spinach leaves

Instructions

  1. Brush pizza crusts with olive oil
  2. Sprinkle with salt and pepper
  3. Add a layer of baby spinach leaves to each pizza crust
  4. Top with mozzarella slices
  5. Slice tomatoes in half and add to top of mozzarella
  6. Sprinkle feta cheese crumbles on top
  7. Slices basil and add to top
  8. Grill on medium heat for 6-8 minutes or until done
  9. Drizzle with remaining olive oil and hot honey to take
  10. Serve immediately
