As a busy work-from-home mom with a toddler and a tween who I homeschool, my days are interesting to say the least. There is never a dull moment around here and some days it’s pretty hard to make sure I stick to a healthy eating plan, let alone eat lunch at a normal time. Between homeschooling, chasing a toddler and deadlines for my job, taking the time out to make myself a salad or a healthy lunch that I enjoy sometimes gets put on the back burner. When that happens, I usually end up eating some mac and cheese or whatever I’m feeding the kids. Or worse, take out. Last week alone, we ate out three times. Not only is that a huge waste of money, but it’s not the healthiest option for me. When I’m trying to stick to a healthy diet, I do better when I portion my snacks and plan out my meals. When I have healthy snacks handy, I’m less likely to reach for the junk food (which I already buy minimal of). The same theory applies to my kids.
This is an ongoing challenge for me but when I meal plan, I not only eat healthier but I save money too.
Portion out fruit and vegetables.
To make this easier, I created designated snack shelves for the kids and I. To make this project work, I picked up some clear plastic organizing trays for the fridge and some different sized glass bowls with lids for the fresh fruit and vegetables. The kids have their own shelf with yogurts, fruits, etc. and now so do I. This makes it easier when I’m hungry for a snack. I can just grab some fruit or vegetables that are already washed and ready to eat.
Pick up some healthy pre-made options.
