After all of the holiday eating these last few weeks, I’m ready to get back into my healthy eating lifestyle. This time Whole30® style. I had great results following a Whole30® lifestyle but after those back to back Disney trips, I definitely fell off the wagon. Then it was the holidays and I really struggled with finding my groove again. But like they say, new year, new you and I’m taking that to heart. I’m meal prepping healthy meals and snacks so I’m not tempted to reach for junk food. I turned one of my favorite dinners into a delicious Whole30® compliant salad and it’s delicious! This Lemon Pepper Chicken Fajita Salad is oh so yummy you won’t even notice you’re eating healthy!
For me, meal prep is crucial if I’m going to succeed in any diet or lifestyle change. When things get busy, if I don’t have a healthy option ready for me, I will always reach for junk food. I’m not proud about it but it’s just what I do.
So I know if I meal prep and the healthy options are ready for me, I’m more likely to stick with the diet plan than not.
One of my favorite ways to meal prep salads are in Ball® Canning Jars. My favorite is the wide-mouthed jars because they’re perfect for eating right from the jar.
They also make meal prep a breeze. I just have to cook up my recipe, transfer it to the Ball® jars when it cools, top it with salad and BOOM! I’m done.
I love switching up my salad recipes so I don’t get tired of them and my favorite right now is this Lemon Pepper Chicken Fajita Salad in a Ball® jar.
It’s full of flavor and doesn’t even need a dressing but I always make a little extra of the marinade since it doubles as a delicious dressing if it gets a little dry in the fridge.
Making it is super easy, just mix the marinade and cook it up in under 15 minutes. Assemble the salads and your lunch is ready for the next few days.
I used the 32oz wide-mouthed Ball® jars I picked up from Walmart and they’re perfect for meal-prepping salads.
You don’t even need a plate when you use them, although you can totally use one. The wide-mouth Ball® jars are perfect for eating right from the jar.

Lemon Pepper Fajita Salad in a Jar
This Whole 30 compliant Lemon Pepper Fajita Salad in a jar is a delicious salad that’s full of flavor and simple to make
- 1 whole lemon
- 4 cloves garlic
- 2 tbsp olive oil
- 1/4 tbsp pepper
- 1 lb chicken breast (chopped in chunks)
- 1 red pepper sliced
- 1 yellow pepper sliced
- 1 container spring mix salad

In a bowl combine juice from one lemon, garlic, olive oil and pepper. Mix well.

In a large zip top bag or bowl combine chicken, peppers and pour marinade over.Let sit or cook right away

Pour chicken mix into pan and cook chicken and peppers 5-7 minutes on each side or until done.

Let cool and then transfer to Ball® Canning Jars. Top with salad and seal. Store in fridge for up to 4 days
This would be a great lunch for my husband. He has to pack a cold lunch so this is perfect.
