Meaty Lasagna Roll-Ups Recipe – A Family Favorite

Meaty Lasagna Roll-Ups Recipe – A Family Favorite

Put a twist on lasagna night with these Meaty Lasagna Roll-Ups! Easier than regular lasagna and just as delicious!

Meaty Lasagna Roll Ups

My son started helping me in the kitchen from a very young age. What started out as decorating cookies and cupcakes has turned into weekly lessons on cooking and having fun. He loves helping me cook some of our family favorites and he learns a lot during the process. One of our favorite recipes to make are these delicious Meaty Lasagna Rollups. They are so delicious and perfect for having the kids help cook!

Anytime I make these, I try to make extra to freeze so we have an easy meal ready and waiting for us that just needs to be baked. Unfortunately, it never works out that way.

These are such a big hit with my family that they never make it that far, we’re usually left with enough for leftovers the next day unless of course my parents find out I’m making them. Then we usually have surprise dinner guests that night. No kidding!

To get started making these lasagna roll-ups, brown your ground beef and break it up as you go with a spatula or wooden spoon. This is a great job for older kids.
Younger kids can help get the spices and cheeses ready for the second half of the recipe.

In a large bowl mix the ricotta, mozzarella and parmesan cheese together with the salt, pepper, parsley and basil. Mix well.

Once the noodles are cooked and have cooled for a few minutes, line them up on a large plate.

Filling them was my son’s favorite part of this recipe. Scoop out about 1-2 tablespoons of the cheese mixture depending on how cheesy you like them. Spread a thin layer of cheese on noodle and roll up.
Place rollups in baking dish lined with ground beef and sauce.
Top with more of the ground beef and sauce mixture and some mozzarella cheese.

These are really easy to make and they freeze well. To freeze for another time or to make them specifically as a freezer meal, simply follow the steps above and instead of baking them right away just freeze them.
Cooking times will have to be adjusted for frozen rollups but they’re just as delicious!
This would have been my freezer pan until some last minutes guests popped over and I ended up cooking them all that night.
Once you make these once, they’ll quickly become a family favorite!

Ive always done these with the meat mixed right into the rest of the cheese mixture. I love how they all have the exact amount of noodle/filling mix.

I see the secret to this is the slow cooker. I tried to make these in the oven and (duh!) the edges were all dry. I'll try your method next.
