Mini Apple Pies
Nothing reminds me of the holidays and family gatherings more than a warm apple pie. The smell of apples and cinnamon filling the air instantly takes me back to my childhood. Thanksgiving dinner prep started early in our house, and I can remember waking up to the smell of a homemade apple pie and desperately trying to sneak a piece all morning long. Now I’m the one making the pies and my family are the ones trying to sneak a piece before company has even arrived. This year I’m all about mini desserts and, for our Thanksgiving dinner menu, I’m serving up these Mini Apple Pies. This way when my husband and son come looking for a piece of pie before our dinner has even started, I can give them their own little mini version and not worry about cutting into my beautiful pie. 

Mini Apple Pies
I just took my standard apple pie recipe and made them into mini pies using a cupcake pan.  The recipe is pretty simple and here’s what you’ll need.

Ingredients:
   3 cups of slice apples (about 4 medium sized apples)
   1 tbsp. flour
   1/4 sugar
   1/4 brown sugar
   1 1/2 tsp, cinnamon
   1 package of pre-made pie crust (you can use your favorite homemade recipe too)

Pre-heat oven to 375 degrees. Slice apples into a large bowl. 
Add in flour, sugar, brown sugar and cinnamon and stir to coat.
Using a large cup or bowl cut out circles of the pie crust.
Place pie crust into each well of the cupcake pan.
Fill with pie filling.
Using remaining pie crust, cut out pieces for lattice top. 
Cook for 35-40 minutes or until edges and top are a golden brown and filling is nice and bubbly. 
Let cool before serving.

Whenever I make these delicious apple pies, the smell just takes me back to my childhood and the memories of Thanksgiving and all the fun we had.

    Oh these looks so delicious! Apple pie is my favorite pie and I LOVE it for Thanksgiving, these mini versions will be great for me to attempt to keep my portions in check. haha.

    Apple Pie is on of my absolute favorite desserts this time of year. I usually make one for Thanksgiving and there are no leftovers. These mini ones would be great so everyone could have their own!

    Oh my goodness, those look glorious! I am with you - there is something about the smell of apples and cinnamon that sends me to heaven. Also, as a not-so-great pie crust maker, the minis would hide a lot of imperfection. I might try this for Christmas!:-)Traci
