We’re hosting Thanksgiving Dinner at our house this year so I’ve been busy trying to fit in menu planning, shopping & trying out different recipe ideas all while taking care of a newborn. To stay it’s a little overwhelming is an understatement. So I’ve decided that for this year simple is better. I still want everything to look perfect and be just so but I’m cutting back on the amount of food I’m making from scratch especially when they are plenty of yummy options out there to help make my life easier. One thing I knew had to be on our dessert menu was pumpkin and apple pie. Those are two family favorites so they must be on the menu but I didn’t want a simple slice of pie on a plate. I wanted something a little more creative. So these Apple & Pumpkin Pie Crumbles were born.
When I was picking up some groceries and other holiday goodies on my list from Walmart, I swung by the frozen foods section and the Mrs. Smith Pie and Cool Whip display caught my eye.
The pies and whipped topping were exactly what I needed for this dessert. I picked up a few while I was there to give the recipe a test run and because the hubby had a serious craving for some pumpkin pie.
I repeated the layers until the glass was full.
