Every year, we celebrate Easter with our family and extended family at our house. We typically start the day off with brunch followed by an egg hunt for the kids and then a late lunch/early dinner later that afternoon. It’s an all day affair and truthfully, while it’s a little bit of work setting everything up, I wouldn’t have it any other way. Since we essentially do two meals for a lot of people, that’s a lot of food we need to make. Usually everyone brings their favorite dish for dinner so that makes it easier but for brunch, those recipes usually fall on me. One thing that always makes an appearance on my brunch table is Pillsbury Grands!™ Cinnamon Rolls. This year, I’m taking it up a notch and making these Pull Apart Cinnamon Roll Muffins.
They’re the same great cinnamon rolls we love from Pillsbury just in a yummy muffin form. I like to get a little creative especially when it comes to the holidays. I have a specific vision in my head for how my table scape should look and the types of foods I want to see.
I desperately wanted to included muffins on our table but didn’t want to go the traditional muffin route. It’s basically tradition that we enjoy Pillsbury Grands!™ Cinnamon Rolls on just about every holiday, so my son immediately asked about the cinnamon rolls when I mentioned muffins. That’s when he said “why don’t you just take the cinnamon rolls into muffins”.
Seriously why didn’t I think of that. I overthink everything and sometimes I need to remember to just keep it simple.
I love that these are so easy to make and that means I don’t have to spent a ton of time in the kitchen. I can whip them up and have them ready in no time at all so I can focus on more important things – like the giant egg hunt.
With just a few added ingredients like milk, vanilla, eggs and cinnamon, these delicious cinnamon roll pull apart muffins can be made any day of the year whenever you need a delicious recipe.
In a large bowl combine the milk, eggs, vanilla and cinnamon and whisk together.
Cut each Pillsbury Grands!™ Cinnamon Roll into eight pieces. Repeat for all the cinnamon rolls.
Then add the chopped pieces to the egg mixture and stir gently to coat.
Brush a cupcake pan with melted butter and scoop some of the cinnamon roll mixture into each. I went for large muffins so I made 8 from one container of cinnamon rolls. If you fill them less and make them a bit smaller, you could probably get about 12 from one container.
Bake in a 350 degree oven for 20 minutes.
Once cooled drizzle with the icing included with the cinnamon rolls and serve.
Not only are they simply delicious but they’ll look so pretty on your brunch table and they’re perfect for grabbing and going.
I’ll serve them with a fruit salad and some other goodies but judging how my family devoured them in mere minutes, I know they’ll be a hit at brunch.

Pull Apart Cinnamon Roll Muffins
- 1 Container Pillsbury Grands!™ Cinnamon Rolls
- 1/4 cup of milk
- 1 tbsp. vanilla
- 2 eggs
- 1 tbsp. cinnamon
- 2 tbsp (butter – melted)
- Melt butter in a small dish
- Brush the inside of the cupcake pan with melted butter
- In a large bowl, add milk, eggs, vanilla and cinnamon and whisk until mixed
- Open can of Pillsbury Grands!™ Cinnamon Rolls and cut them into 8 pieces
- Add cinnamon roll pieces to bowl and gently stir to coat
- Spoon mixture into cupcake pan
- Bake in a 350 degree over for 20-25 minutes or until muffins are cooked through and brown on top.
- Remove from oven and add icing when cool

Oh wow, these look so good! This would make a delicious and filling weekend breakfast. I like to do a bigger breakfast on the weekends, enjoy the slower mornings.
