Having picky eater at home means I sometimes have to get creative with dinner and I can never go wrong with Sloppy Joe Cornbread Muffins! Whether it’s a fun spin on a traditional recipe or finding ways to change up family favorite meals to keep dinner interesting while at the same time making sure they’ll eat it. Using some pantry basics, these Sloppy Joe Cornbread Muffins are a quick and easy meal any day of the week.
This is a pretty simple meal using only a can of Sloppy Joe mix, a box of cornbread muffin mix and some ground beef, this is one dinner that even the pickiest eaters will enjoy.
Plus it’s easy to make. Which, given life right now, is a must for any recipe I’m making.
My kids love Sloppy Joe night but I don’t want it to get boring so they don’t want to eat it.
Instead, I just took the recipe they love and combined it with another favorite – corn bread and boom Sloppy Joe Cornbread Muffins that no one can say no to!
HOW TO MAKE SLOPPY JOE CORNBREAD MUFFINS
This is a great recipe to have the kids help with. Older kids/teens can brown the ground beef and younger ones can help mix the muffin mix.
While the ground beef is browning, I start mixing the cornbread mix so it’s ready to go in oven as soon as it’s ready.
Once it’s ready, I just spoon the sloppy joe mix right on top of the muffin mix and bake for 14-16 minutes (or according to package directions).
