Looking for  an easy and  delicious dinner idea? These Sloppy Joe Cornbread Muffins can be made with pantry staples and they’re ready in about 30 minutes!

Having picky eater at home means I sometimes have to get creative with dinner  and I can never go wrong with Sloppy  Joe Cornbread Muffins!  Whether it’s a fun spin on a traditional recipe or finding ways to change up family favorite meals to keep dinner interesting while at the same time making sure they’ll eat it. Using some pantry basics, these Sloppy Joe Cornbread Muffins are a quick and easy meal any day of the week.

This is a pretty simple meal using only a can of Sloppy Joe mix, a box of cornbread muffin mix and some ground beef, this is one dinner that even the pickiest eaters will enjoy.  

Plus it’s easy to make. Which, given life right now, is a must for any recipe I’m making.

My kids love Sloppy Joe night  but I don’t want it to get boring so they don’t want to eat it.

Instead, I just took the recipe they love and combined it  with another favorite –  corn bread  and boom Sloppy Joe Cornbread  Muffins that no one can say no to!   


This is a great recipe to have  the kids help with. Older kids/teens can brown  the ground beef and younger ones can help mix the muffin mix.

While the ground beef is browning, I start mixing the cornbread mix so it’s ready to go in oven as soon as it’s ready. 

Once it’s ready, I just spoon the sloppy joe mix right on top of the muffin mix and bake for  14-16 minutes (or  according to package directions).

These Sloppy Joe Cornbread muffins are a simply and delicious dinner using pantry staples. Ready in under 30 mintues, it's one dish the whole family will love.


  • 1 can of Sloppy Joe Mix
  • 1  box of Corn Muffin Mix
  • 1 lb. of Ground Beef
  • 3  eggs (for  the muffin mix)
  • Milk  (for the muffin  mix)


  1. Brown Ground Beef in pan
  2. Add in sloppy joe mix once done
  3. Mix corn bread mix according to package directions
  4. Line cupcake pan with cupcake liners
  5. Spoon corn muffin mix into cupcake pan
  6. Spoon some sloppy joe mix on top
  7. Bake 14-16 minutes or according to package directions
