I’m all for shortcuts in the kitchen. Dinner that taste like I spent hours cooking them but are ready in under 30 minutes are staples in my house. I just don’t have more time than that to spend in the kitchen. Life is busy and finding time to cook can be overwhelming sometimes. Soups are a family favorite because they are hearty, kids love them and on these cold days here in New Jersey, they’re comforting. With the Chinese New Year approaching, I wanted to make a soup with one of our favorite foods – chicken potstickers. They’re delicious by themselves but even better in this Spicy Potsticker Soup.

Don’t worry if you don’t like a lot of spice, this soup is delicious without the kick too.

Now remember how I said I like quick and easy meals? Well I don’t have time to make homemade potstickers so I’m glad my family is such a fan of Ling Ling Chicken potstickers. They’re already made and just need to be cooked in with the soup, making it the perfect option for busy nights.

Ling Ling potstickers are well-known and well-loved. They’re  made with delectable chicken or pork, and tender vegetables  combined in a mouthwatering dumpling wrapper. Each variety comes with Ling Ling signature dipping sauce.

This is a dinner I can start quickly and let cook while I get other things done around the house or we finish up our homeschool lessons for the day. It’s simple enough to make even on your busiest days.

You’ll need a few things like chicken broth, Julianne carrots (save the time cutting and buy them already sliced), scallions, Ling Ling Chicken or Pork Potstickers, fresh garlic, celery, ginger, olive oil, spinach and red pepper flakes for the heat (leave them out if you’re not a fan of spice)

In a soup pot, cook carrots and celery for a few minutes, Then add in the chicken broth, spices, and Ling Ling Potstickers. Cook for 20 minutes and enjoy.

Since we’ve been learning about Chinese New Year in our homeschool program, this was the perfect dinner to incorporate. Our learning carried over even after our school day was done as we talked about the significance of potstickers and what they represent in the Asian culture.
