There’s nothing I love more than heading out to the garden and picking fresh tomatoes that I grew myself. I’m pretty proud of the fact that I can grow my own food. Unfortunately, in the fall and winter months I can’t really do that here in New Jersey and I’m thankful I can still get fresh goodies from my local market. That’s one of the great things about this Tomato Crostini with Marinated Feta recipe, I can make it year round whenever I get a craving.
And if I’m being honest, there isn’t a week that goes by that I’m not craving my Marinated Feta recipe. I mean it’s delicious right from the jar and in so many recipes.
This Tomato and Marinated Feta is amazing by itself but extraordinary on crispy crostini. Or even just fresh sliced bread. I snack on it both ways.
And don’t be scared of the thought of making crostini at home. It’s the easiest to do right in the air fryer.
I just spray both sides of the bread with some olive oil (brush it on if you don’t have a spray) and pop it in the air fryer for about 4-5 minutes. Instant crostini.
And this tomato and marinated feta is truthfully just as easy.
If you garden like I do, make sure you plant plenty of parsley, basil, thyme, chives and cherry tomatoes so you can enjoy this recipe anytime you want.
Otherwise, just make sure you grab all those ingredients when you pick up the feta cheese from the store. That’s really all there is too it.
Another tip, make more than you think you’ll need because I can guarantee you will be snacking from the bowl. It’s just too good not to.

HOW TO MAKE TOMATO CROSTINI WITH HERB MARINATED FETA
Now let’s get down to business and make this yummy recipe. But first you’ll need a few things. Grab a a good Extra Virgin Olive Oil, a lemon, feta cheese, fresh basil, fresh parsley, fresh thyme, fresh chives, black pepper and red pepper flakes.
In a bowl combine the feta, herbs, spices, oil and tomatoes in a bowl. Slice your bread and toast in the air fryer. Then spread this amazingly delicious spread right on top of the warm bread and enjoy!
