Mint Chocolate Chip Ice Cream Sandwich Cake

Who wants some ice cream? If I even whisper those words, My oldest comes running. I honestly can’t blame him. There is never a shortage of ice cream in our freezer. It was the one snack I really craved when I was pregnant and honestly there is nothing better than a delicious bowl of ice cream on a warm summer night! Well actually, maybe there is. There’s nothing better than a yummy ice cream cake.
Typically when it comes to ice cream cake, I always buy one. Sometimes it’s just easier and I’m all about easy recipes. Until I had an idea for an easy ice cream cake hack.

Last weekend, we were shopping at Walmart and while we were there, they were holding a Blue Bunny Ice Cream Sandwich demo. Getting to try samples of ice cream sandwiches totally made his day. So I grabbed a box to try my hand at my own ice cream cake. Don’t worry, you don’t have to miss out on all the fun, keep an eye out for the next Blue Bunny Demo taking place on June 20th. There were so many delicious flavors of Blue Bunny Ice Cream to pick from but Mint Chocolate Chip is a favorite of my entire family, so that’s what we went with but you could totally make this with any flavor.

This easy peasy ice cream cake is perfect for a after dinner treat or your next barbecue and since it doesn’t take a lot of effort, you can feel good about making it.

Ingredients:

  • 1 Gallon Blue Bunny Mint Chocolate Chip Ice Cream
  • 1 box Blue Bunny Ice Cream Sandwiches
  • Wax Paper (or foil if you don’t have any wax paper left like me)
  • Hot Fudge
  • Whipped Cream (I made homemade but a tub of frozen whipped topping would work too)
  • Chocolate Sprinkles
I used a square glass pan and lined it with foil to remove the cake easier.
Place ice cream sandwiches along bottom of pan.

Spoon softened Blue Bunny Ice Cream on top of ice cream sandwiches.

Top with another layer of ice cream sandwiches.

Place pan in freeze and allow ice cream to get hard again.

When ready to serve, remove from freezer. Frost with whipped topping and drizzle with chocolate sauce and sprinkles.

Serve Immediately.
Homemade Whipped Cream:
  • 1 Pint Heavy Whipping Cream
  • 2 Teaspoons of Vanilla
  • 1/4 cup of Confectioners Sugar
In a stand mixer beat cream on med-high speed until it starts to thicken (about 5-7 minutes). Add vanilla and sugar and beat on hight for another 3-4 minutes until thick. Place in refrigerator until ready to use.

This is my go-to whipped cream recipe and it’s really easy to whip up a batch. It paired perfectly with the ice cream and I can’t wait to serve this at my next picnic!
