Topped with fresh blueberries, chopped pieces of chocolate blueberries and homemade chocolate whipped cream, these blueberry chocolate chunk cupcakes are a decadent little treat perfect any time of year.

These cupcakes get a major upgrade with the addition of some yummy chocolate covered blueberries. Grab a bag of your favorites, chop them up and add them right into the cupcake batter mix. 

Growing up in New Jersey, blueberries are plentiful during the summer months and I was flooded with summer memories and all the yummy blueberry recipes I love to make. Since it’s still snowy and cold, I knew these would be perfect to tempt my taste buds and hold me over until we finally get some warm weather.

I went the semi-homemade route here and used one of my favorite box cakes mixes, a delicious homemade whipped cream that is super easy to make and some fresh blueberries along with the Dove® Fruit.

Blueberry Chocolate Chunk Cupcakes

Elevate your plain chocolate cupcake recipe to a new level with these Blueberry Chocolate Chunk Cupcakes

Ingredients

• Chocolate cake mix (box or from scratch)
• 1/4 cup of chocolate covered blueberries chopped into pieces
• 1/4 Fresh Blueberries
• 16 oz. Heavy Whipping Cream
• 3 tsp. Cocoa Powder
• 1 cup Confectioners Sugar 
• 1 tsp. Vanilla 

Instructions

1. Mix cake mix according to package directions. Add chopped chocolate covered blueberries to mix and stir.
2. Bake cupcakes according to package directions.
3. For the whipped cream add the heavy whipping cream to bowl and beat on medium-high for about 4 minutes. Once cream starts to thicken add confectioners sugar, cocoa powder and vanilla.
4. Beat on high for another 2-3 minutes. You want to beat it until stiff peaks form (be careful not to over-beat the cream)  Store in fridge until you are ready to use and cupcakes are completely cool.
5. Once cupcakes are cool, frost with the chocolate whipped cream and sprinkle some chopped Dove® Fruit pieces and a few fresh blueberries right on top.
