Getting back into the swing of things after the holiday season is exhausting enough so I’m all for simple and delicious dinners that I can get on the table quickly.  That’s exactly what this yummy Fish Stick Taco recipe is – simple, delicious and ready in under 20 minutes! The last thing dinner should be is a chore. Instead dinner time should be the place where we can all gather together to reminisce about our day, unplugged from all the distractions around us. I mean who doesn’t love Gorton’s Fish Sticks? When I’m struggling with what to make for dinner, I know I can grab some fish sticks and all will be right with the dinner crowd. In fact, this is one recipe they love to help me make.  Gorton’s new and improved fish sticks are made with sustainably Wild-Caught Alaska Pollock and contain no fillers, no preservatives, artificial colors or flavors making them a perfect choice for mealtime.

What we eat is important to us and I try to make sure we eat a well balanced diet that includes plenty of fish. I try to include seafood into our menu at least twice a week and with recipes like these Fish Stick Tacos it’s easy to do. There are so many delicious recipes you can make with fish sticks for a twist on dinner.

Both of my kids have grown up in the kitchen with me. It was important to me that they both learned their way around the kitchen from a young age so as they got older cooking a homemade meal would come natural to them.

Now they love to cook, or at least help cook, dinner. I’ve also noticed that when they help make dinner they’re more likely to eat that meal without complaint. I think it’s the satisfaction of knowing they helped make it.

When it comes to recipe, these Fish Stick Tacos are pretty easy. You only need a few ingredients for a dinner that will have your taste buds screaming “more please”.

It’s just as simple as cooking a package of Gorton’s Fish Sticks and assembling the rest of the ingredients while they cook.

While the fish sticks are cooking, you’ll cut up the cabbage, jalapeño pepper, cilantro and avocado. If the kids are old enough, this is a great project for them.

Once the Gorton’s Fish Sticks are done cooking, remove them from the pan and begin to assemble the tacos.

On a flour tortilla, layer red cabbage with 3 -4 fish sticks. Top with diced the jalapeño pepper, avocado chunks and cilantro.

We like to drizzle ours in with a sriracha mayo with plenty of extra on the side for dipping.

Easy Fish Stick Tacos

Tacos aren’t just for Tuesday anymore with these easy to make fish stick tacos.

  • 1 box Gorton's Fish Sticks
  • 2 cups of red cabbage – shredded
  • 6 flour tortillas
  • 1 avocado – diced
  • 1/2 jalapeño pepper – diced
  • Cilantro
  • 3 limes cut into quarters
  • 1/2 cup of mayonnaise
  • 2 tbsp. Sriracha
  • 1 tsp. lime juice
  1. In a small bowl, mix mayo, sriracha and lime juice. Mix well. If you want more of a kick, add more Sriracha 1 tsp. at a time until desired flavor.
  2. Cook Gorton’s Fish Sticks according to package directions
  3. Shred 2 cups of red cabbage and set aside
  4. Dice the avocado and jalapeño
  5. Chop Cilantro (NOTE: If you’re not a fan of Cilantro, use Parsley instead)
  6. Cut limes into quarters
  7. Once Gorton’s Fish Sticks are done, place 3-4 on top of flour tortilla and red cabbage.
  8. Top with avocado, jalapeño and cilantro
  9. Drizzle with the Sriracha Mayo and serve with lime wedges.
