These Keto friendly Tuna Stuffed Avocados are filling and delicious. Perfect for a quick meal on busy days.
Trying to maintain a healthy diet and finding meals that I don’t get tired of quickly can be somewhat of a challenge. Especially at lunch time. Now that I’m trying out this Keto diet thing, it’s even a bit more challenging. I’m still new to the Keto lifestyle (only a week in) but I’m trying to make it easy on myself so I’m more likely to stick to the plan and not cave the minute things get hectic over here. I want something that is delicious and filling and easy to make. One of my go-to lunches even before I started Keto, was tuna salad stuffed avocados. They’re delicious, full of amazing flavor and they keep me full until dinner so I don’t end up snacking. So I just tweaked my recipe a bit and made them Keto Friendly Tuna Stuffed Avocados.
Prior to this new lifestyle, I was watching what I eat, and I omitted the mayo found in traditional tuna salad and replaced it with a delicious garlic lime vinaigrette. But since mayo is actually encouraged on the Keto diet, I still eat regular tuna salad with mayo for a change in the week too.
Typically I make the salad and dressing ahead of time usually on Sunday when I do most of my meal prep and when I’m ready for lunch, I’ll stuff the avocados with the already made salad. This makes it an easy lunch option especially when I’m pressed for time.
Doesn’t it just look delicious? The flavors really compliment one another nicely and it’s such a refreshing lunch.
There are even times, I just eat it right from the bowl. It’s so good, I can’t help my self.
Tuna is a great source of protein that helps keep me full so I can ensure I get a delicious meal even when I don’t have time to cook.
To make the tuna salad, you’ll need to add 2 pouches of tuna to a bowl along with chopped red onion, chopped cherry tomatoes, cilantro, chopped jalapeño.
Gently toss together and season with salt and pepper to taste.
In a another bowl mix together fresh lime juice, olive oil, garlic, salt and pepper and mid until combine.
Toss tuna salad with dressing and let sit.
Cut an avocado in half, scoop out some of the center and chopped the avocado you scooped out. Fill with tuna salad and chopped avocado and enjoy.
One bite and you’ll see why I can’t get enough of this salad. Super delicious and full of amazing flavor.
It’s why these Keto Friendly Tuna Salad Stuffed Avocados are one of my go-to recipes.
