Caprese Salad with Lemon Balsamic Dressing
This Caprese Salad is a showstopper! Perfect for dinner, side dish or take it to your next party. With a Lemon Balsamic dressing, salad never tasted so good!
One of my favorite appetizers is caprese. If it’s on the menu at a restaurant, you can be sure that I’m ordering it. There’s just something about the combination of basil, fresh tomatoes and mozzarella that I just can’t say no to. Since I had a craving for it, ironically on pizza night, I just knew I had to take a chance and make some at home. Luckily I had the ingredients on hand for a different recipe but I was just craving it and this Caprese Salad recipe was born.
I whipped up a simple lemon balsamic dressing for it which was to die for but you could always just use plain balsamic. If you like lemon, I highly recommend trying this one. It’s so crisp and refreshing.
We paired ours with pizza night but truthfully this dish could be a meal in itself. Add in a little protein, and this is a delicious meal by itself.

I also add a side salad or another dish to go along with pizza and the kids love picking out their favorite salads. This one recipe they both agree on and request it the most.
I’ve put my on spin on a traditional Caprese Salad and served it over a bed of fresh baby spinach it’s oh so delicious. Your family will be begging you to make it over and over again too!
The fresh mozzarella, basil and lemon flavors combine with each other perfectly for a mouthwatering masterpiece.
It’s a really simple salad to make too. Just a base of fresh baby spinach leaves, topped with grape tomatoes and mozzarella pearls mixed with fresh parsley, basil, garlic, lemon zest then drizzled with a lemon balsamic dressing.
First you’ll make the dressing which is just 3 ingredients – olive oil, balsamic vinegar and fresh lemon juice. Once that’s mixed set it aside as you chop up your fresh herbs.
In a small bowl combine the chopped basil, parsley, minced garlic and lemon zest.
Then pour over your tomatoes and mozzarella pearls. Toss gently to cover.
Pour the tomato mixture over the spinach and drizzle with the dressing.
Ya’ll this is good. So, so Good.

HOW TO MAKE CAPRESE SALAD WITH LEMON BALSAMIC DRESSING

Enjoy Caprese in a whole new way with this Easy Caprese Salad with Lemon Balsamic Dressing
Ingredients
- 8 oz container of fresh baby spinach leaves
- 1 container grape tomatoes - halved
- 1 container mozzarella pearls
- 2 tbsp. fresh parsley
- 2 tbsp. fresh basil
- 2 cloves fresh garlic - minced
- Zest of 1 lemon
Lemon Balsamic Dressing
- 2 tsp. fresh lemon juice
- 2 tbsp. olive oil
- 1 tbsp. balsamic vinegar
Instructions
- In a small bowl, mix the lemon juice, olive oil and balsamic vinegar. Set aside.
- Place spinach in a large bowl.
- Add mozzarella pearls, halved tomatoes, parsley, basile, lemon zest and garlic
- Pour dressing over top and gently stir to combine.
- Serve immediately

Whenever we have pizza night, the kids are allowed to have one slice but then it has to be followed with a large bowl of salad before they can have more pizza. Less mom guilt that way 🤓

Pizza and salad is a classic combination. I love this salad recipe instead of just a a lame iceberg lettuce salad.

Oh my so good! I added grilled chicken strips bought pre made & pepperoni too as well as some white beans so we made it a meal! Def found a new fav dish!
