Raise your hand if you love lemons! I cannot get enough of lemons. Of course lemonade is a summer staple, but I love cooking and baking with lemons all year long. They give whatever dish I’m making a sweet, tart burst of flavor. You’ll always find my kitchen stocked with lemons for whatever I’m cooking. Like these Lemon Cranberry Muffins.
Sweet, tart and full of flavor, this is one of my all time favorite muffin recipes. Well, it’s tied with these mini Lemon Blueberry Bundt Cakes. I couldn’t pick a favorite if I had too.
The good thing is, I don’t have too! And neither do you!

HOW TO MAKE LEMON CRANBERRY MUFFINS
Don’t worry is baking isn’t your specialty. This Lemon Cranberry Muffin recipe is so easy to make you’ll wonder why you haven’t tried it before!

Lemon Cranberry Muffins
These light and fluffy Lemon Cranberry Muffins are a delicious breakfast or snack. They have a sweet and tart taste you will love!
Ingredients
- 1 cup of fresh cranberries - quartered and halved
- 1 tbsp. lemon zest
- 1/2 cup granulated sugar, plus 1 tbsp.
- 2 1/2 cups all purpose flour
- 2 1/2 tsp baking powder
- 1 tsp salt
- 2 eggs
- Juice of 1 lemon
- 4 tbsp unsalted butter, melted
- 1/4 cup canola oil
- 1 cup milk
- 1 1/2 tsp vanilla
Instructions
- Preheat over to 350 degrees
- Spray a muffin tin with nonstick spray or line with cupcake liners and set aside
- In a small bowl, toss cranberries, lemon zest and 1 tbsp. of sugar. Set aside
- In a large bowl, whisk together 1/2 cup sugar, eggs, melted butter and oil until combined.
- Add dry ingredients to the wet and stir until just combined
- Fold in cranberry mixture
- Divide the batter between the 12 muffin cups
- Bake for 22-25 minutes or until muffins are golden brown on the edges
- Let cool and enjoy
