This easy to make peach and cucumber salsa is the perfect recipe that just screams summer.
This is my first year growing cucumbers in my backyard garden. I naively went into growing them not fully realizing how much they would grow. While my tomatoes are slowly coming along, the cucumber patch is churning out more cucumbers than I can keep up with! My husband and I are eating my Cucumber and Tomato Salad weekly but I thought what else can I make with cucumbers from my garden. With a bunch of peaches ready to turn any minute, I thought why not. That’s how this Peach and Cucumber Salsa was born.
It’s probably one of the easiest recipes I’ve ever made. It literally has only five ingredients.
But don’t let that fool you, this flavorful salsa is great with some nachos, topped on tacos or chicken or scoop it right from the bowl.
Since that’s what my family was doing.
Truthfully, I didn’t even get to eat any. Well maybe one bite to sample it when I was making it.
My parents and husband actually thought it was for them (and it totally was just ….not yet). Food bloggers have to get the right shot and I wasn’t done.
But they weren’t waiting, once dinner was started I came back to finish my pictures and it was ALL GONE.
They all said it was amazing and have requested it for every cookout going forward. So that’s always a good thing.
WHAT CAN I USE THIS PEACH AND CUCUMBER SALSA ON:
While it was delicious by itself. I’m dreaming of adding this recipe onto things like:
- Grilled Chicken
- Mahi Mahi
- Fish Tacos
The list is endless and really depends on your personal tastes. But there’s nothing wrong with just scooping it up on a crispy tortilla chip and eating it just like that. (But I do recommend the chips with a hint of lime).
WHAT ELSE CAN I ADD TO THIS PEACH AND CUCUMBER SALSA:
Again this is up to your personal tastes here but when I make it again, I’m going to add some jalapeño pepper to it. Only about half of one for a little kick. But I like a bit of spice while no one else in my family does.
